Just to kick off February's challenge on the Game Forum, here's something that makes it easy to get your vegetables!

Action Packed Vegetable Soup

I was so happy that I had put a veggie soup in the crock pot yesterday....  I love crock pot.  And the best part is that I had leftovers which are now in the fridge and freezer so I can get them out as needed...  :D

Yum, Clairelaine, that sounds delish! I'm going to try it today because we have such a crazy schedule tonight with all the hockey and karate and piano lessons. We can eat it anytime (well, whenever we all end up at home together!)

This soup was great! I spiced it up with some spicy V-8 and a dose of red/black pepper mix. My family likes spicy. Hubby must have said he liked the soup 4 times -- a biggie for him, especially for something without meat! Can't wait for another bowl for lunch tomorrow!

so what's the challenge?  i am dim when i diet.  :-)
