Veggie Chips?

Quote  |  Reply
So it seems all the chips on the market are wayyy too high in calories for a nice snack.

Salsa is really low in calories and are a bunch of other "dips"...the only trouble is finding something chip-like to eat them with!!

So... i thought it would be a lot easier / better to make my own. Trouble is, im not sure what to make it from.

Potato is kind of high in calories (very dense), so thats out.

I am thinking maybe eggplant or squash cut very thin and baked on a sil-pad (no oil needed, nothing can stick to it).

Anyone try to do it before? Or have any ideas?

They're not chips, but you could try salome's Sweet Potato Fries
Thats tonsss of calories... looking for as calorie free as possible.
man i would love to hear a solution to this i love chips so much.... anthing really cruncy really
You could try freeze dried vegetables and fruits.  They're crisp and have no added fat.

Have you tried the baked chips that are on the market?
These were mentioned in the Hungry Girl Newsletter, but I've never tried them

Soytato Crisps
I made yummy tortilla style bites...

thinly sliced butternut squash, baked I suppose it was 400 or 425 until brownish, top with cooked ground turkey, salsa and a dab of cottage cheese - was good!
You could take a pita bread and bake it in the oven until it's crisp, and then break it up into chips.  I like mine dipped in hummus!
oo squash, good idea (a cup of that is only about 60ish calories...bet if you sliced it really thin you could bake up a ton of chips).

I was worried about eggplant, it gets really soft when cooked...so probably not the best idea. (But eggplant raw isnt that bad, stiff and light texture).
have you considered Soy Crisps -- I love the Sea Salt variety.
i make my own baked potato chips....and i've done it with sweet potatoes too.  lemme see if i can find the link for you.

actually, i posted it in my journal some time back, but here it is:

Preheat oven to 300.  Line cookie sheets with aluminum foil and spray with cooking spray.  Slice potatoes thinly with a mandolin (I used russetts, but use any you like).  Place potato slices on double sheet of paper towel and cover with another double sheet of paper towel to blot dry.  Place on foil lined cookie sheet.  Spray tops of potatoes with cooking spray.  Bake about 20 minutes or until tops of chips start to brown, then remove from oven, flip the chips over, and return to oven until light brown.  Remove from oven and salt or flavor with garlic powder, onion powder, chili powder, or spices of your choice.

These are very crunchy, very low fat, and cheap to make; I bought a 10 pound bag of potatoes on sale this week for $2.50.  6 potatoes makes about 5 snack sized bags of chips, enough for lunches for a week in our house.  Hope you'll try it.
Beth!  Thank you so much.  I knew I'd seen these somewhere but couldn't remember.  Next time I'm copying recipes from people's journals to save them.
