Can someone recommend an excellent vegetarian cookbook or a low calorie cookbook that can win over my family? We need to get more veggies in our diets.

Well, there's tons of them out there. I don't happen to own one. I just use CookingLight.com. Or Google it.
Vegetarian Times had a huge collection of recipes in their cookbook at my University's library. We have a large nutrition dept. so I'm not sure if it is easy to find in other libraries. However, check your local library under vegetarian and there is usually at least 3 to choose from. You can often find recipes online too. Vegetarian Society or Vegetarian Times have recipes online last I checked. There are a lot of good free recipe sites where you can place the option of low-cal or vegetarian/vegan too. Good luck!
I use the Moosewood Low-Calorie cookbook - got it on eBay for a few bucks. Ellie Krieger also has a healthy cooking book, although not vegetarian.

Deborah Madison's "Vegetarian Cooking for Everyone" will tell you how to prepare pretty much every vegetable you've heard of, and a few you haven't. She's a chef, so some of her recipes are pretty time-intensive, but many are quick and simple. It's great for learning to be more adventurous with vegetables. I've been pretty impressed with the Weight Watchers cookbook, too. It has meat recipes, but it has plenty of vegetarian entrees and sides, and gives you nutrition info for each recipe.
I like Steven Raichlen's High Flavor, Low Fat Vegeterian Cooking. He's won so many awards for his books and the recipes are well tested and different, but easy to do.
There's a recipe for shiitake mushroom mac & cheese that is wonderful.
