so guys, just wondering about some good weight gain recipes that include vegetables? I like them a lot and dont wana cut them out, but their not high in cals and they fill me up a bit, but i dont wana leave em out,

How do u guys include veggies in your day?

Choose the starchier vegetables .... sweetcorn, peas, squashes, sweet-potatoes, regular potatoes, broad beans... rather than too many leafy greens.  And don't forget pulses/legumes like lentils, beans and chickpeas - they're all plants, as are nuts and seeds.  Adding butter, olive oil or a cream sauce is a nice way to bump up the cals in vegetables.   This recipe for 'Creamed Spinach with Nutmeg', is one delicious example.

as long as you are getting enough of the other food groups and not filling up on them so you avoid other stuff i think its good. i eat them everyday my mum cooks them in a little butter and they are delicous . she also mashies swede and potatoe with butter and buts it on pies. she does hot dogs with lightly fried onions and sweetcorn on the cob with butter . she does vegetable stroganoth which is veg ans a white creamy sause with rice . what about califlower cheese ?

Yea I guess I could, see thing is I LOVE VEGGIES! But I love them raw and fresh and as they are (evoo I can do though), but i love them fresh and  oh so delicious!! Carrots, Peppers, greenbeans-mmmm. And I detest! all the pulse thingys, What I will do is keep having me fruit in the morning, and having salady stuff (and corn) at lunch, and carrots and corn, im just such a fussy veg eater, i love em all, but in their raw form.

HI Drivenlass....have you thought about juicing them?  I juice carrots, celery, beets ..you name it.  You get raw, vital energy and it doesn't fill you up.  I still eat whole veggies but this way i can eat enough without feeling too full. 

yea i drink smoothies, but at mealtimes adding veg is hard, i think ill just have extra something else and add dressing to my veggies, id be willing to have more of something else just so i can have em the way i like,xxxx

What about some type of bean salad. Mixed beans eg green, kidney, ummmm i dont know the names of the other types but you can buy cans of four or five bean mix. Add in chicpeas, and what ever other fresh vegges you like. I add carrott, onion, peppers, courgette and peas etc. Add some type of vinagerette and maybe a boiled egg chooped up on top. Mmmmmmmmmm tastey!!!

Obviously you will need to add some higher cal foods to have with it, i would have a roasted chicken breast, some broccoli and some type of desert to go with it. Yum yum

when i eat salad, i have the regular veggies but ill add TONS of trail mix AND clumps of almond butter, 1-2 tbspns.

the AB is crunchy and sticks together+delic!

I use a lot of dips like regular honey mustard dressing which is my favorite. I will make stir fry veggies with olive oil to get in my healthy fats or flaxseed oil drissled over steamed veggies cause you can't cook it in them or it burns off the healthy omega. Also steamed veggies with motzerella cheese

1. use dense veggies (beans, edemame, corn, potatoes...)
2. cook with oil or butter
3. combine with foods like rice, pasta, couscous, quinoa, etc.
4. dip fresh veggies in ranch (denser) or hummus (unsaturated fats)
5. add cheese, sour cream, mayonnaise etc.

examples of cooked veggies:

-creamed spinach
-potato or sweet potato fries
-cranberry sauce with added sugar
-baked potato with cheese/sour cream/cottage cheese and extra chopped veggies and meat
-macaroni and cheese with peas and carrots (kid favorite, lol!)
-stir fry asian veggies with pasta or rice and oil
-veggie pizza
-eggplant parmesan
-veggie lasagna

examples of raw veggies:

-pasta with olive oil, parmesan, and tomatoes/basil/olives
-bean and corn salad with bell pepper, cilantro, whatever other veggies, and vinaigrette or sour cream
-coleslaw
-carrot salad with mayonnaise, dried fruit, and nuts
-fresh green salad made dense with nuts, croutons, cheese, meat, beans, salad dressing, etc.

Hey Driven..another thing i do is to add veggies to my sandwiches.  I will add avacado slices, cilantro, different types of lettuce, grated carrot or slices of roasted beets to veggie burgers, tuna sandwiches...whatever.  Also when i make a big salad i throw in nuts and goat cheese ....it makes for a more interesting and tasty salad!
