Veggie shepherd's pie with sweet potato mash recipe

Remove the butter and wine if desired, it works just as well as with, and tweak the cheese as desired (amounts, type, etc).

I make it every year for St. Patrick's Day, and whenever else I'm in the mood.  I just took a "regular" shepherd's pie recipe and made it veggie by swapping out any non-veg ingredients with veg ones.  I use Harvest Burger crumbles instead of the meat, etc. 

If you have a non-veg favorite recipe, I'd suggest playing with it to make it vegetarian, and that's true for shepherd's pie or anything else.  I'm usually happiest with the outcome when I start with an old favorite.

On the other hand, if you don't have an old favorite to start from, I'll be happy to pull out my recipe and post it here.  I think it's quite a nice one, if anyone would like to see it.

Now that it's not 3 a.m. I pulled out my recipe and typed it in.  ;-)

I didn't take the time to figure out how to fix the two ingredients that the analyzer couldn't figure out, but I did look them up.  The analyzer lists the calories for this at 98 per serving, but you need to add 90 more per serving to cover the Harvest Burger and the Guinness draught (80 and 10 respectively).  You would also need to add whatever calories your version of mashed potatoes has.  I use skim milk and only a little Smart Balance Light, so it's not too bad, but YMMV.  But anyway for a hearty main dish, I think about 190 calories (plus potatoes) is really not a bad deal all in all.
