How can I get veggies in at breakfast?
I'm not really much of a vegetable eater, but I do love potatoes, corn, (both starch I know) green beans, and broccoli as far as green vegetables go. I prefer the potatoes and corn, but broccoli is my favorite as far as the green vegetables go. I have tried eating carrots EVERY POSSIBLE WAY IMAGINABLE... including dipped in onion dips (I don't like ranch), raw plain, cooked plain, cooked with honey, raw with honey, raw and cooked with yogurt, smothered in sugar.. I just really hate the taste of carrots, though I am still able to eat them in soup. (As long as it is not a carrot soup!)
I will also eat a salad every once in a while but don't really care for lettuce, so I will usually only eat it if it has chicken in it. It's getting kind of boring, obviously, only having broccoli, green beans, and limited potatoes and corn as my veggie side dishes for lunch and dinner, and I would like to be able to get some veggies in at breakfast. How do you get veggies in for breakfast? Smoothies? If you have any tasty, low-cal smoothie recipes or other ideas, please let me know! :]

(Cooked and uncooked in various ways.) I have NO problem eating fruit though, I love almost every fruit I come across, but of course... the stuff I don't like is what has all of the good things I need, ah well. It seems I just have a really horrible taste for sweet things. When people say the "natural sweetness" of vegetables, I don't get it? They taste horribly bitter to me!

How about an egg white omelet with whatever veg tickles your fancy? Very filling and good for you!
How about a veggie omelet made with egg whites? You can add in any veggies you want like onions, mushrooms, green peppers, spinach, asparagus, etc. Add a little cheese if it helps with the veggie taste for you. I also like scrambled eggs with just mushrooms & onions...Mmmm! :-)

ibii, I had another idea for breakfast veggies....can you handle the taste of tomato juice or V8 juice? I don't care for tomato juice myself, but the low sodium V8 juice is pretty good.

I have been able to down a bit of V8 in the past, but I was also able to eat carrots with dip in the past, so I don't know for sure. I do love tomato SAUCE, though... I can never get enough pasta mmm! Hmm, now I'm hungry.. and yeah.. food_freak... I haven't been to bed yet! LOL :D!

I always feel so sorry for people who hate vegetables, and wonder how you manage to lose weight. If I didn't have my veggies to fill me up without adding too many calories, I'd be starving all the time.

When I was little my mom used to sneak vegitables into my eggs by adding grated zuccini. I don't particularly like it by itslef by any means, but to this day I still love it in my eggs.
I always grate some up and fry it for a bit in olive oil spray. then I adds eggs whites and scramble it. I adda a little bit of low call cheese. and when it's done I mix in a little nonfat cottage cheese. (sounds strange I know, but my mom has always made it this way for me.)
It's very tasty. Everyone one of my friends who have tried love it. It's worth a try. you really won't tast the zuccini at all.
You could try making your own V-8... Blend up random amounts of:
- Tomato, Broccoli, Romaine Lettuce, and/or Bell Pepper (or any veggie)
With:
- Strawberries, Grapes, Blackberries, Blueberries, Oranges, Bananas, etc
And blend in some Ice and Water or even better try some Diet Tea (Arizona makes a really good Diet Peach and Diet Green tea)
Make your veggies taste SWEET lol... It works for getting kids to eat their veggies...

when i read the title, my first thought was 'yuck, veggies for breakfast' (my thing is fruit, strawberries, banana,orange, cantaloupe,apricots....) But those omelets sure sound yummy. great idea!
You could make zucchini and carrot latkes. I realize you don't like either of them, but as latkes they are more like potatos.

You might like sweet potatoes--they are good baked.
Have you tried "petite peas" (smaller green peas)? I'm not a fan of the big ones, but I love the smaller ones.
Throw bell peppers and/or onions into savor dishes (including omelets).

Every week I dice and sautee' 2 red peppers, 1 yellow and an orange bell pepper and a large onion. I sautee it in just a little 'I can't believe it's not butter' but you can also use EVOO.
I keep them in the fridge and add about 1/4 cup to my cup of egg beaters as well as a few tablespoons of salsa..
I eat this everyday and I love it! Good luck!~

What about mashed cauliflower? Tastes kind of like mashed potatoes but a lot healthier. Since you like broccoli, you might like this as well :)

Carrots are really good for you - I know this might sound weird, but have you tried dipping them in raw almond butter - it's better for you than peanut butter, and is very good for you. The almond butter is all you'll taste - that and the crunch of the carrots, but I don't believe I can taste the carrot at all. Give it a try!

I drink a glass of V-8 or v-8 Fusion with breakfast.
v-8 = 50 cals/cup and 2 servings of veggies v-8 fusion light = 50 cals/cup, 1 serving fruit, 1 serving veggies.
I like Hot and Spicy V-8, personally, but if you don't like the v-8 taste, go for the Fusion - you can't even taste the vegetables at all. Tastes just like fruit juice.

If you don't mind the investment in a juicer ($20-30 at Walmart or Kohl's) you can tailor your morning veggies to your taste. A cup of carrot juice with apples, grapes and whatever else seems good (that you would normally eat raw -- potatoes are not a good choice! :P ) is wonderful in the morning -- like a cup of energy! Oranges are great mixed in with the carrot too, and you can add tomotoes if you like. It is much better for you (and in my opinion better tasting) than V-8 because it doesn;t have any of the added sodium to preserve it.
You get the best nutrition if you drink it right away, but you can make extra and keep it in the fridge for a day or so.

10-15 grapes
1/2 - 1 apple (you can use prepared if you need to sped it up)
1 orange (or a bit of prepared orange juice)
You don't need to peel them or anything. You get more nutrients and fiber if you don't peel them anyway.
