i'm moving there very shortly. central texas to be exact. i can now wear my faux black leather cowgirl boots (i refuse to call them "cowboy" boots, i'm a GIRL) on a daily basis without getting weird looks, but how hard a time am i going to have finding the essentials? vegan margarine, flax seeds, TVP...

Where are you moving in Texas? Whole Foods Market is based out of Austin. If you are going to be in or neat Austin, you're set!
I don't have much trouble (I'm not vegan, just vegetarian, but I've got friends who are). I've been all around the state and can always find places which will work with vegans and vegetarians. You'll probably be safe assuming, as with anywhere, that the bigger the city-the more options and access to the things you want you'll have. As long as you end up in a town with a population over 1,000...you'll probably be able to find things...and if not, store owners, who will come to know you if you live in a small town, will help you get them or start stocking the things you need.
I know that many regular grocery stores are starting to stock *more* vegan and vegetarian happy-things. There are also usually several "alternative" food stores in most places of decent size...you just have to look for them. You'll be fine in Dallas, fine in San Antonio, fine in Austin, fine in Houston, and even fine in West Texas.
When you eat out...there are many Thai and Mediterranean (and even Italian) places that will make things "special" for you if you ask. If you end up in a steak house (yikes) just tell them you're allergic.
It's about like any other state. You can find what you need. :)
Besides, real Texans are nice. :) They want to make you happy, so just make friends and you'll be fine! :)
