Vericheesey Casserole Recipe
Vegitarian casserole from Moosewood
| 1 | cup soybeans |
| 1 | cup brown rice |
| 4 | eggs, lightly beaten |
| 2 | cups nonfat cottage cheese |
| 1 | cup mozzarella cheese |
| 1/2 | lb mushrooms, chopped |
| 1 | cup onion, chopped |
| 2 | tbsp garlic, chopped |
| 1 | tsp basil |
| 1 | tsp thyme |
| 1 | tsp marjoram |
| 2 | tbsp soy sauce |
| 4 | tbsp butter |
| 1/2 | cup parmesan cheese, grated |
| 1/2 | cup bread crumbs |
| 2 | tomatoes |
- cook soybeans and brown rice.
- Saute onions, garlic, mushroom and herbs in butter until onions are soft.
- Combine all but the last three ingredients.
- Spread mixture into a large, buttered pan.
- Top with sliced tomatoes and combined parmesan and crumbs.
- Bake at 350 for 40 minutes, uncovered.
