Vericheesey Casserole Recipe

Vegitarian casserole from Moosewood

Ingredients
1 cup soybeans
1 cup brown rice
4 eggs, lightly beaten
2 cups nonfat cottage cheese
1 cup mozzarella cheese
1/2 lb mushrooms, chopped
1 cup onion, chopped
2 tbsp garlic, chopped
1 tsp basil
1 tsp thyme
1 tsp marjoram
2 tbsp soy sauce
4 tbsp butter
1/2 cup parmesan cheese, grated
1/2 cup bread crumbs
2 tomatoes
Directions
  1. cook soybeans and brown rice.

  2. Saute onions, garlic, mushroom and herbs in butter until onions are soft.

  3. Combine all but the last three ingredients.

  4. Spread mixture into a large, buttered pan.

  5. Top with sliced tomatoes and combined parmesan and crumbs.

  6. Bake at 350 for 40 minutes, uncovered.
