Vertical Chicken Roaster

Last night, I found my vertical chicken roaster.  I bought a whole chicken (economical meat), washed it, removed the "stuff" in the carcass, slid it over the rack and popped it into a 350 degree oven.  (I line a roasting pan with aluminum foil and put the roaster in the lined roaster to keep juices from dripping into my over.  But actually, the drip pan caught them all!!

In about 1 1/2 hours - I removed a delicious roasted chicken which had all the fats drained out of it.  The skin was crisply roasted brown and its ready to go for a meal.

Eating a roasted chicken without the skin - provides a lean meal with a delicious taste.

Ways to change the flavor of the chicken meat:

shake your favorite spice flavors into the cavity before placing the chicken on the rack; serve with dipping sauces like dijon mustard or barbeque sauce;  use cajun seasoning or other spices at the table - sprinkling on the cooked meat.

Hope this gives you an idea for a delicious meal... I cooked mine last night while I was cleaning up supper and watching the news.  I wrapped it in aluminum foil and put it in the refrig for another night's meal...

or stuff the cavity with cut-up lemons
This sounds like a pretty good thing. I'm going right now to put that on my shopping list.

Seems like I could put it in the oven, go for my walk and weightlifting, then throw together a veggie dish when I get back and supper's done. Woohoo!
It also just occurred to me that I never buy whole chickens because they're hard to cut up. Should save me some money now that I know of something easy to do with a whole chicken. Thanks! (I'm all about "ease of preparation"!)
you can also get those stands that fit a can.. to make beer can chicken.. you put 1/2 can (a big can with 1/2 the beer drained out) in it.. put the chicken on it and roast in the oven or the grill.. gives it a great flavor.. and you can use any liquid.. not just beer!  :) 
haah, obsidyan, i love beer butt chicken... but once my boyfriend bought cornish hens to make beer butt chicken, and i had to find tiny cans of beer. i did. it worked. rock.
