Very easy crockpot recipe
Take a whole chicken (visible fat removed) and dump it in the crockpot along with a chopped onion and a bottle of your favorite bbq sauce. Cook on low all day. Remove chicken (carefully since it will fall apart as you lift out), debone and deskin, shred and add back to pot.
Only like 215 calories a 4 ounce serving. Delish over whole wheat bun or brown rice. Did not beleive how good it was until I made it, plus I have lunch for several days!

I love chicken cooked like this. I remove all the skin so it's not fatty at all.
Have you ever tried Sticky Chicken? You rub the chicken inside and out with dry spice powder (like Emeril's Essense or similar) and refrigerate it in a plastic bag overnight. Then you put an onion inside and put it into the crockpot. All you do is cook it on low for 8 to 10 hours - no need to add any liquid. It comes out falling off the bone and very juicy.
Slow cookers rule!

I love the chicken & crockpot idea. I'm gone a lot so this will work out great. I If I want chicken like that I buy one already cooked. I only do beef or pork roasts in the pot never thoucht of chicken. thanks
Oh, I'm loving this thread! I bought a chicken today because of it, and will cook it in the crockpot tomorrow! That's dinner tomorrow and lunch all week; thanks!

grid, it was GREAT! I didn't do the barbeque sauce, as I love barbeque soooooo much, I could not have an entire crockpot of it in the house (because I would eat it until I felt sick, and then a couple of hours later, eat some more!). I did cook the chicken in the crockpot, though, and do plan on pairing some of it with barbeque sauce for dinner one night. (Just one portion. I hope....!)

I portion the bbq, pulled chicken immediately, and stick it away for lunches. This way it prevents me from eating the whole thing right up! Now I'm experimenting with different commercially prepared bbq sauces. So far I like Sweet Baby Rays......and thoughts?
