I want carrots - should I be caring about G.I.?
I keep hearing about this sugar thing, and someone just told me carrots are bad as diet food because of it.
But seriously, what else can I eat 100 of in 1 sitting with very little consequence? Okay there are a lot of things, but I actually enjoy carrots.

Hm. I can try :D Carrots always get me, because I buy them with intent to eat loads of them instead of loads of something else.
I don't know why carrots got this bad rep. According to this chart peeled and cooked they have a GI of 49... 'Low GI' is anything below 56.

I totally agree I am not sure why carrots have gotten on the "bad" list....I eat baby carrots "daily" its a great snack food (my opinion in comparison to whatever this mystery is on carrots being bad).
The database link on University of Sydney's www.glycemicindex.com isn't working right now, but the high GI numbers are for COOKED carrots. On one individual test they reported a GI of 90 or so, which is very high (though not as high as cooked parsnips -100 - which is the same as the sugar control). As GIJane points out, the results vary a lot from lab to lab, and even test to test in the same lab.
If you eat your carrots uncooked, the GI value is very low - down in the 20's as I remember.
Just one warning with carrots: I used to eat a TON of carrots pretty much every day. About 6 months later, I went to my doctor for a check-up, and he thought I had jaundice because my skin had turned this sickly shade of orange. Nope, I was just an excessive carrot eater. Man, those things are good. I like dipping them in salsa (trader joe's has the best), or soy sauce, or even mustard. Hell, I just love carrots in general!
These are natural sugars with fiber so that helps with balancing blood sugar so you don't get such the high and low. If you have a concern with blood sugar then add some cottage cheese or other protein in.
I love carrots! I eat them all the time too, and my skin has not turned orange. They are great to dip in hummus or guacamole or salsa or just plain! They are a great diet food.
i eat carrots all the time. i'm not orange. and in fact i was eating them at my lowest weight so it didn't really affect my diet
