Just want to make sure that I've got this right......

Tuesday/Thursday- 30-40 minutes of running/cardio

Monday/Wednesday/Friday- 20 minutes interval training incorporated with 40 minutes strength training

Am I considered lightly active, moderately active, or very active? Also, do you think that with a balanced diet, I could lose weight using this exercise regimen?

If you intend to use the burn/intake tools on this site, your activity level would depend on what you during the day WITHOUT the exercises you mentioned.  Then add those in your Activity Log as activities done that particular day.

If it has been part of your daily routine long before using this site and you do those activities almost unconsciously without wanting to track each one, then it would probably be "moderate activity," but don't select that activity level and THEN add them to your activity log, or else you'll end up with an inaccurate balance between intake and expenditure.
