i want an omelette but I have no bread

Well, the title sums up my situation pretty well...

im really feeling for a yummy veggie omlette but i have no bread (or bagel, or english muffin or anything like that) to eat it with

what else can I eat an omelet with??

by itself... why do you need bread?

 

i love it on a bed of tomato and spinach.

I ate an omlette this morning and do often. It had mushrooms, cilantro and a little bit of yukon gold potato in it.  For a side (I can't eat wheat, so I never have bread) I usually have Louis Rich turkey bacon. It's only 35 calories a slice and DELICIOUS!!

i've just always eaten omelettes as like sandwiches (i.e. with bread)

i feel like i wont be full enough if i just eat it alone

i do have tomatoes and spinach so maybe i'll try that...

And may I add, when you have something as nutritious and filling as an omlette, why consume extra calories you don't need by eating bread too?

A potato works nicely.  One thing I've done is to cut up a small potato, microwave til almost done, and then stirfry in the small amount of oil still in the pan from the eggs. 

Tonight's dinner: 2 eggs, one small potato, 1 c. swiss chard

try a wrap (spinach tortilla) or a light sprinkle of Parmesans cheese

 

but i have recently started "not" using bread (i am a bread junkie) and have come to like the omelet for itself.   Loaded with spinach and sun dried tomato... I don't need the bread.

I usually eat omelets alone or with a side of fruit.
How about a large potato cut into thick slices and baked in the oven untill golden, sprinkle with a seasoning you like and only have two slices.  It's like eating toast on the side, well "it's like" not exact. :) ~Linda
