We have started to eat tacos this way...

Put a bed of lettus on your plate topped with 96/4 ground beef and diced tomatoes and salsa (2 tbsp) and a FEW baked tortilla chips. It is great. Taste just like a taco.

HINT- try cooking the beef with chopped garlic as well as the spice pack. It's great!

..... or substitute meat with 1 cup Hormel Vegetarian Chili !!!!
This is a great idea. If you prefer not to eat beef, try it with ground chicken or turkey. 
I do this, also.  I also add drained chili beans (any would work) and a drained can of Mexicorn to my meat mixture.  Delicious taco salad minus the 1000-calorie taco salad shell!  I used to look forward to this for lunch after every "taco night" for dinner.  I'd make this taco salad with leftover taco filling mixture for lunch the next day.  I haven't made this in awhile, unfortunately, though because I have ZERO self control with this dish.  You CAN make it healthy.  I, on the other hand, generally cannot.  :-)
