are you sure you dont have a cooking spray like Pam? I use that for everything. Also I have an olive oil sprayer and it very lightly coats the pan with oil, i think its 7 calories per spray? I cant remember.
I guess if you were frying with water you would need a very smell amount, just enough water to coat the bottom of the pan, so it would kind of be like steam frying it. If you want it poached then you would use quite a bit of water and let the raw egg sort of boil in it.
Never heard of an omelet cooked over water, but I have experimented with eggs and water. Sunny side up on a thin layer of water on a none stick pan, takes longer to cook and you technically get a poached egg.
Try experimenting with the omelet, have a small amount of water over the pan on boiling and than add the beaten eggs over it, keep a glass of water beside you to add a bit of water when needed, but careful, it'll spray and steam, so only add a bit or lower the heat when adding. Also keep the bottom of the eggs from sticking to the pan, so keep checking with a spatula and lifting it a bit.
I haven't tested this way out yet, so you'll be the first to try that experiment. Good luck. Experimenting never hurts and it's fun to.

for poaching, i would keep the heat the same, and the time i leave the egg in depends on how well done u like ur egg.
to make a tasty omelettle using very little oil, i would use a non stick pan, and like another poster suggested, add some oil to a paper towel then rub the pan with it. Then add egg in the pan, add ur omelette ingredients on top and then put a tight lid on the pan. turn the heat down very low, and let it sit for 5 mins or so.. the lid traps in the water and heat, so it cooks the top.
one of the main things that makes an egg stick is trying to cook it too fast/on too high a heat.
oil on a paper towel is how I "grease" pans for baking and it works well ... a good suggestion.

I tried an experiment today. I made scrambled eggs on water. Nice, light and fluffy. I took a none stick pan and added water to it so it'll spread out on the bottom. There was a bit of a spot where the water wouldn't reach, but I didn't want to have too much water. I kept it on the stove till it started to boil. I beated an egg in a small rice bowl till it was nicely mixed and then pored it over the pan and boiling/fizzing water. I used a spatula to collect the part of the egg that was running off and watched it as it started to look like a omelette. I kept bringing the spatula under it so it won't stick or burn, breaking it at the same time till it was all scrambled. collected the scrambled egg, trying to drain as much water away from it before putting the scrambled bits on the plate and wala, water fried scrambled egg.
Put say 2 eggs in boiling water and time for 3 minutes. During this, toast and dice into squares 2-3 slices of bread (diet if you choose) and drop in a bowl. Remove 3 minute egss and drop in cold water or run under cold water. Contents will still be warm. Crack egg and pour yolk over toast. Then cut up white and put over toast. Stir and salt./pepper.
Taste JUST like dipping bread in sunny side up eggs. No fat. Diet or no diet, amazing and you wont miss the fat.
