Watermelon Gazpacho Recipe

Cold, refreshing soup

Ingredients
6 cups watermelon
1 cup chopped apples
1/2 cup onion, finely chopped
1/2 cup peppers, green, finely chopped
1 tbs basil, fresh, chopped
1/2 tsp salt
1/4 tsp pepper
1/4 tsp chili powder
1 tbs vinegar, cider
Directions
  1. Puree the watermelon in a blender

  2. Combine with the other ingredients in a large bowl

  3. Refrigerate, covered, at least 1 hour before serving
