I was eating less than 800 calories a day about three weeks ago and I did a lot of research and talked to my doctor and I realized how stupid that was. So since then, I have upped my calorie count by about 300 calories/day and apparently, I have gained 7 lbs during that time. Now, I know that it's "natural" to gain weight after this but is 7 lbs a lot to gain? To me, it seems a bit too much. and I feel really discouraged right now.

its becuase you were starving your body and you still are just to let you know. Teens need 1800 cals to make therer bodies function properly when your in starvation mode your body clings to every ounce of fat you have and when you start eating more you just gain like crazy

In your first post you said you were 127 and 5.3.5, and a teen.  So I assumed about 16, and added 7 lbs to get 134.....  Sounds like an ideal weight to me...

The BMI tool says "Based upon your current Body Mass Index (BMI) of 23.2, you are currently classed as at a healthy weight."

ah sorry, there was a typo in my original post. I increased it by about 600 calories. And as for eating 1800 calories, my doctor told me, but I find it really really hard to. Here's my current meal plan:

 b: a small bowl of cereal with 2% milk/or toasted cheese on bread with a glass of milk

s: usually a serving of grapes/baby carrots/an apple

l: an egg sandwich on whole wheat/cracked wheat bread with some sort of fruit/vegetable

s: an apple

dinner: a generally large-ish serving of vegetables (or a vegetarian sort of meal) with two small pieces of chicken

I'm pretty sure that adds up to less than 1800 calories a day, but honeslty, I feel stuffed when I eat all that. I have the occasional raisins or a small biscuit here and there, but generally, I'm pretty full with a meal like this. Is there anything wrong with it?

Why not try adding in some higher calorie healthy foods into your meal.  I.e. add some nuts or peanut butter to your snacks and or meals.  They are higher in calories and good for you with lots of good fats and protein.  Add a tbls of toasted almonds or other nut of your choice to your cereal in the morning, have some whole wheat crackers with a bit of peanut butter for one of your snacks, or if you prefer fruit, I always like having a banana or apples WITH some peanut butter.  Try adding in some protein with your snacks.  You also seem to be lacking in calcium, which is not good for a teen, you are still building bone density, and lack of calcium will contribute to osteoporosis later.  Also, with the starvation diet you have been on, you may already have lost density.  Maybe try adding in more milk somewhere, or some yogurt (not the no-fat kind), you need about 1300 mg of calcium a day as a teen.
