Weight Gainers: What did YOU eat today?


I am copying the many times copied thread, "What did you eat today?" in hopes of helping some of those who are just starting to gain and have no clue what to eat. I know that when I began weight recovery, I was eating tons of low-cal foods just because that's what I was used to. I learned the hard way that dense foods are essential to weight gain when you have high caloric requirements (at one point I needed 4500 cal to maintain my weight on BEDREST). Perhaps newbies can get some ideas if we post our weight gain meal plans! Even if you're not gaining anymore, grab an old one and post it!:]
Please note that every body is different and some will need more or less calories than others to gain. This thread is just so that you can get an idea of what you need.
Oh, and yes, I'm breaking the "no calories, no portions" rule, since it is pretty helpful in this case. If you want to post cals/portions you can. I just ask that you don't post if you're not eating enough, though as this is a weight gain thread, I would hope none of you are undereating.;]
I'll start....
Breakfast (875 cal)*

  • 1/2 cup oatmeal (150) cooked with
  • 1 cup evaporated whole milk (300)
  • 1 mashed banana (100)
  • 2 tbsp peanut butter (200)
  • 1 tbsp ground flaxseed and cinnamon to taste (50) 
  • 1 hard-boiled egg (75 cal)

Morning Snack (300 cal)*

  • 1/4 cup mixed nuts (200)
  • 1/4 cup dried apricots (100)

Lunch (660 cal)*

  • 1/4 cup rice cooked in 1 cup chicken stock (300) and
  • 1/2 cup canned or cooked chickpeas (145) and
  • 1/3 cup shredded cheese (150) and
  • 1/4 cup each onion, peppers, and tomato (30) cooked with
  • 1 tbsp olive oil and curry powder to taste (120)

Afternoon snack (390 cal)*

  • 1 serving baby carrots (35)
  • 1/4 cup hummus (155)
  • 1/4 cup mixed nuts (200)

Dinner (875 cal)*

Evening snack (480)*

  • 1 cup plain whole milk yogurt (180)
  • 1/2 cup homemade granola (300)

About 3600 calories :]

Agruskin: Don't let yourself restrict, no matter how tempting it gets! o: I wish I had an opportunity to go out and eat somewhere again, because with letting go of my worries more and more I actually think I could enjoy it, now! You won't gain a million pounds from a single meal that might put you over where you are at the moment even if your brain tells you that - and you are doing so well! :D I know I missed out on so much through my ED (my birthday, my mum's birthday, my dad's birthday, my boyfriend's birthday -__-) and don't ever want that to happen again.  Enjoy the company and the night and the fireworks, and the food, rather than letting just the food rule your evening. [:

Happy 4th everyone! I went to a cookout today and just ate what I brought myself pretty much. I'm too lazy to type out everything else I've eaten today!

Lunch- Potato roll, pasta salad, blueberry- blackberry cobbler, string cheese, chewy bar

hi everyone-

so as i said previously, i normally restrict when i know that ill be going somewhere to eat, well i didnt.  i went, i ate, less than others but i ate and im feeling sort of full but i still have the cals left for my night snack.  i may force myself to eat anyway, i dont know what to do in this situation really?  also, i dont trust my satiety.hunger feelings bc theyre so messed up and i dont know what normal eating is.  as AQUA said, too tired to type it all out--

DINNER-bite of a roll, small salad w/dried cherries, chunky homemade veg soup (~2/3 cup maybe), chicken drumstick, sweet potato +apple casserole (what was portioned to me which was a small-medium amount, i probably wouldve even taken more.  ate a lot during the day..

I am so scared today. I have already been forced to eat at parties all week, but tonight I have to go to dinner at Cracker Barrel with my grandma! I really want to restrict all day, but I know I shouldn't. I hate being put in positions like this!!!

Hi everyone!! Im back and its been a while. Its a long story..but ive had zero access to the internet latley. Anyways heres what i ate today:

Breakfast: Oatmeal with semi skimmed milk, tbsp peanut butter, sliced apple, blueberries

Snack: 3 Ryvita's with tbsp peanut butter

Lunch: Tuna mayo sandwich (2 slice wholeweat bread, tin tuna in springwater, tbsp light mayo and a little salad)

Muller Amore Seville orange yogurt

Snack: Banana

Dinner: Mum's speacial homemade vegetable soup with a slice of homemade wholeweat bread

Snack: Options instant hot chocolate ('mint madness') made with semi skimmed milk

Overall about 2000 calories, have been doing this amount for a few weeks. Also saw my doc (had to pratically be dragged there, i hate doctors!) and have been told to up my protein, calcium and iron intake. She is also going to refer me to a nutrionist/ dietician.  I have my weekly weigh in on Monday and the ed is going nuts as always.

trigirl- I know what you're going through. Eating out is one of my biggest fears. But just keep in mind that normal people go out to eat a lot, and they eat fine and enjoy themselves. And they don't gain 20 pounds over night from doing that! I would say just pick something that you really want off the menu and try to enjoy it, and don't think about the calories. I know that is way easier said than done, but eating out is a fear that needs to be conquered so stay strong!

Bfast- SNB on whole wheat mini bagel, oatmeal made with almond milk, nectarine, almond milk

Snack- String cheese and applesauce

Lunch- Vegetarian taco from Maui Taco, w.m. Brown Cow yogurt

Snack- Berries, carrots, Yoplait kids, pudding, Boost smoothie

Dinner- Morningstar farms pizza burger on potato roll, corn on the cob w/ butter, fruit salad

Snack- String cheese, orange, almonds, Luna bar, SNB and banana shake, Ben & Jerry'

So I definitely at less during the day yesterday and today... Yesterday because of it being the 4th and me being unsure about all the cookouts, etc.  And today because I was going to dinner at my grandmother's house and was just unsure about what I'd be eating there.  I definitely caught up with my calorie goal for yesterday with some evening drinks (maybe not the healthiest way...), but today I'm still struggling to get in the calories and I HATE eating late at night.  But so far today:

Breakfast:  scrambled egg whites with 1/2 an avocado; smoothie with 1 cup skim milk, 1 medium banana, 1 scoop protein powder, and 1 cup peanut butter Puffins cereal

Snack:  1 cup Fage 0% yogurt topped with 1/3 soy nuts; 2 tbsp strawberry jam

Lunch:  1/2 cup vegetarian refried beans with cheddar-flavored almond cheese; 2 slices wheatberry bread; 1/3 cup dried pineapple with 1 tbsp almond butter

Snack:  smoothie with 1 cup skim milk, 1 medium banana, 1 scoop protein powder

Dinner:  1 1/2 pieces of zucchini quiche; small salad with balsamic vinaigrette; 1/2 cup blueberries (passed on the brownies though I probably could have used them)

Dessert (so far):  1/2 pint vanilla soy ice cream; 1/2 cup Trader Joe's Mixed Berry granola

...and I still haven't broken even with my burn meter for the day, let alone hit 3000 cals.  It would definitely help if I exercised less (I biked 12 miles and swam for 30 min today), but doing that would almost be harder for me than just eating more.

hi everyone-sounds like everyone is doing alrt.  i deff need to increase, and i deff need some help w/ it.  ive come to realize that since im so rigid i tend to have the same few dinners repeatedly, i like them, but i rarely change.  theyre also sort of low in cals which means i need to make up for it during the day.  im at about 1600 cals if anyone has any suggestions, thanks!

BFAST- Kashi choc sundae roll! bar-AMAZING btw, apple, yogurt

SNACK- protein shake

LUNCH- 1/2 THOMAS'S bagel, PB+J on 1/2, butter on the other, fage yogurt, orange, celery w/ PB, tbspn trail mix

SNACK- yogurt, strawberries

DINNER- roll w/ cheddar cheese, tbspn apple butter, veg salad w/ tabspn trail mix

SNACK- yogurt, apple

hia all, sorry ive been m.i.a. for a bit, i wnt away for a few days and im super busy getting ready to go on holiday next week :D sounds like everyones doing great though so keep it up :)

agruskin i remember eating the same things allthe time so i know where youre coming from it was sooo tedious! i still eat fairly low cal meals, but eat more of them, i eat 6 meals of approx. 350 cal a day :) you could maybe do that, having 250-300 at each meal? there are tons of options if you look back at my posts they cal all be done for 300 ish cals!

breakfast: oatmeal w/ frozen berries and milk and a pear with fromage frais

snack: mocha and a yoghurt topped with granola

lunch: salad (mixed leaves with cucumber, tomatoes, olives, boiled egg, grated carrot, apple. cheese and tzatziki)

snack: pb and banana sandwich

dinner: spinach + ricotta canelloni

snack: strawberry and banana milkshake and 25g teddy grahams

I'm going to my friend's birthday party today. Scary scary scary! Hopefully I can convince myself to eat what I've planned.

Breakfast- Mini w.w. bagel w/ veggie cream cheese, oatmeal made w/ almond milk, nectarine, egg, almond milk

Snack- ?

Lunch- Grilled cheese on w.w., Stonyfield w.m. yogurt, TLC cherry chocolate bar, carrots

Snack- Yoplait kids, watermelon, carrots, pudding, Boost smoothie

Dinner- Slice of cheese pizza, piece of birthday cake

Snack- Orange, almonds, string cheese, Clif Mojo bar, some sort of smoothie, Ben & Jerry'

hi everyone!

i really want to increase today, i just dont know how, like i dont know what to add in?  i already eat 3-4 yogurts a day, its like my fav food.  any suggestions of in btwn snacks or something i can add to my plan?  my bfast is about 360, then 60 cal shake, 400 cal lunch, 150-200cal snack, 300ish dinner, 220 snack.  i think i need more veggies in my diet?

CHARLIE-thanks, so annoying but i really cant do bananas or oatmeal.  do you count how many carbs you have a day? that and cals are the only thing i really look at, now i eat like 5.5 carbs a day. 

AQUA-youre doing amazing!  i know you can do it!

aqua- i have a question. i have been craving ben and jerry's a TON lately. how much do you typically have? just curious.

I Would also like to know how much everyone eats junk food/ chocolate/ ice ream/ cakes and muffins etc. How often would it be okay to eat stuff like this and still gain healthy/ follow a healthy diet? It terrifes me and i would appreciate any answers.

Snack: 3 Ryvita with light cream cheese (in come in a mini tub - soooo cute!), apple

Lunch: Leftover mums speacial vegetable soup, two slices hovis wholemeal bread, Danone activa strawberry yogurt

Snack: Eat Natural Almond and Apricot bar

Dinner: Aubergine and Goats cheese pasta (whole wheat pasta, aubergine, chopped tomatos in tomat juice, diced red onion, little bit of oil, goats cheese)

 Beans, veggies and brown rice with lots of cheese on top!:)

Black beans and corn stir fryed with onions and peppers in tortillas with salsa!

A frittata or quiche with veggies and cheese!

A whole milk/yougurt smoothie with fruit and a peanut butter/raisin covered celery stick to the side.

Bagel pizza!

Huge baked potato with beans/cheese/salsa/veggies on top!

Cream of wheat made with milk and sweetened with dried fruit, honey, chopped apples or pears, blackstrap mollases...etc and topped with nuts

MISSMAGILL-thanks so much!  ended up having a boca cheeseburger but ill deff use those ideas.

ok-I NEED TO INCREASE TOMM!  after logging im at 1500 cals, BUT-its all really guessing at amounts i think so it could be a little more i think?  tomm will be 1650 and ideas are always welcomed!

Soo this weekend I went to buffalo with the boyfriend and his family for a big july 4th celebration.. there was so much food, it was kinda insane. At first I was so nervous because usually i restrict all day to make room for what I'm going to eat at dinner, but this weekend I didnt calorie count at all so I had no idea what I was at or anything. I logged everything when I got home and I hit around 2500 to 2700 cals. I estimated because I wasnt sure of the serving sizes or what they made the food with. But I didn't die, and it was alot of fun.. alot of the calories were from drinks ;) I'm not sure if that is a good or a bad thing.. but for once I wasnt stressing over every little thing:) and hey we all need to let loose once in a while

back from inpatient treatment but having trouble keeping up with the excessive meal plan, although i'm eating a lot healthier and not obsessive too much anymore

 

breakfast: cup of all bran, 1/8c sliced almonds, 3tbsp craisins, 1/2c 8th continent vanilla soy milk, cranberry juice

snack: strawberrie

lunch: veggie burger on wheat roll with cheese and lettuce, salad with dressing, teddy graham trail mix (1/2 c)

snack: blueberries and a couple multigrain chip

dinner: chicken breast, wheat wrap, baby spinach with dressing, caponata, cranberry juice

snack: teddy grahams, tbsp peanut butter, 1/2 banana

taywies-Whoo I love B&J's! I have it almost every day because it is a really good way to get my calories up at night if I haven't had enough. I get these individual little cups of them at my supermarket that have about 1/2 a cup in them. If I don't get those, I obsessively divide a pint sized container of it into 4 and dig a section out with a knife so I get exactly 1/2 a cup. Ice cream was one of my biggest FF's (especially premium), but my mom made me try Ben and Jerry's and I got over that fear quickly because I missed it so much!

Dinner- Tomato and basil Morningstar farms burger with provolone on potato roll, fries, Annie's cheddar bunnies spread with Laughing Cow cheese

Snack- String cheese, orange, Clif Mojo bar, almonds, SNB and banana shake, Ben & Jerry's!

Aqua: Haha, I keep pots and containers of things to portion food into, still - when my dad gets a chinese takeaway I ask him to leave the plastic tubs! P: Mostly because I used to have bingeing problems and so want to make sure I don't go crazy, so I divide certain foods up (and they're just nifty for storing leftovers). I think I know the individual mini-tubs of B&J's you mean - they sell them in the Asda near me, but every time I'm there they're always low on choices \: I need to go early morning some time and get me some Cookie Dough! Haagen Daaz does multipacks of their mini-tubs, but their ice creams make me feel sick. :\ Truthfully, though, I prefer more traditional ice cream flavours. Strawberry or neapolitan are my favourites! [:
