Weight Gainers: What did YOU eat today?


I am copying the many times copied thread, "What did you eat today?" in hopes of helping some of those who are just starting to gain and have no clue what to eat. I know that when I began weight recovery, I was eating tons of low-cal foods just because that's what I was used to. I learned the hard way that dense foods are essential to weight gain when you have high caloric requirements (at one point I needed 4500 cal to maintain my weight on BEDREST). Perhaps newbies can get some ideas if we post our weight gain meal plans! Even if you're not gaining anymore, grab an old one and post it!:]
Please note that every body is different and some will need more or less calories than others to gain. This thread is just so that you can get an idea of what you need.
Oh, and yes, I'm breaking the "no calories, no portions" rule, since it is pretty helpful in this case. If you want to post cals/portions you can. I just ask that you don't post if you're not eating enough, though as this is a weight gain thread, I would hope none of you are undereating.;]
I'll start....
Breakfast (875 cal)*

  • 1/2 cup oatmeal (150) cooked with
  • 1 cup evaporated whole milk (300)
  • 1 mashed banana (100)
  • 2 tbsp peanut butter (200)
  • 1 tbsp ground flaxseed and cinnamon to taste (50) 
  • 1 hard-boiled egg (75 cal)

Morning Snack (300 cal)*

  • 1/4 cup mixed nuts (200)
  • 1/4 cup dried apricots (100)

Lunch (660 cal)*

  • 1/4 cup rice cooked in 1 cup chicken stock (300) and
  • 1/2 cup canned or cooked chickpeas (145) and
  • 1/3 cup shredded cheese (150) and
  • 1/4 cup each onion, peppers, and tomato (30) cooked with
  • 1 tbsp olive oil and curry powder to taste (120)

Afternoon snack (390 cal)*

  • 1 serving baby carrots (35)
  • 1/4 cup hummus (155)
  • 1/4 cup mixed nuts (200)

Dinner (875 cal)*

Evening snack (480)*

  • 1 cup plain whole milk yogurt (180)
  • 1/2 cup homemade granola (300)

About 3600 calories :]

Summerlovin: My brother did the exact same thing when we were making milkshakes the last time he came home to visit LOL. He used like 1/2 the jar of peanut butter, an Ensure Plus and a Banana. Sooo funny. I was pretty bad off at the time so nearly duct taped me to a chair in the kitchen to make sure I drank the whole thing.

Mipply: 1000 calories is not enough to put on any real, sustainable weight. I was at about the same weight you are at now last June. I had to start out slow as well - initially with 800-1000 calories a day. By the end of the summer, I was up to 2400-2600 calories a day. I had gained 3 pounds in three months. You are going to need to eat more, and you should try to prepare yourself for increasing by 200-300 calories every few days/every week.  I know the fear of gaining weight too quickly - and I know its an overwhelming fear for you right now. That initial weight gain you saw though - that was not real weight. It takes about a week to two weeks for your body to adjust to processing food again. During that time, there will be a lot of fluctuation as your body starts producing fluids again for digestion etc and at such a low weight - your body needs a bit more time to get itself able to handle procesing it all. Eating 1000 calories may cause a fluid shift initially, but it will level off and you will not continue to gain. You might even start losing. I think you need to trust your dietician. That is the best way to have a "controlled and stead weight gain".  Though you need to realize that while you may try, weight gain is not always going to be consistent, and the only way to really, truly recover is to take a bit of a leap of faith and stop trying to obsessively control it. So what if you gain a pound or two in a week? The following week, you may not gain at all. Weight is rather funny like that.

l: tofurky, artichoke, & sprout sandwich w/ red pepper tapenade on sprouted grain bread, 3 apricots, & an iced oatmeal raisin luna bar.

s: green smoothie w/ almond milk, banana, carrot, spinach, almond butter, & vega protein.

d: amy’s roasted vegetable pizza & butternut squash soup.

s: heaping bowl of peanut butter chocolate soy ice cream.

total ~2500.

 

b: cinnamon oatmeal w/ cinnamon puffins & pecans, & cranberry juice alongside.

l: 3 falafel w/ tahini & hot sauce, & fattoush salad, w/ chocolate covered sesame snaps for dessert :)

s: berry pomegranate luna cookie, fuji apple, & almonds.

d: grilled sesame tofu kabobs & red peppers stuffed w/ curried quinoa & mushrooms.

s: chocolate mint newman o’s cookies & vanilla coconut milk ice cream.

total ~2800.

yesterday:

b. porridge made with skim milk and cinnamon, yoghurt

s. fruit bun

l. chicken and a bagel with cheese, chocolate biscuit

s. small piece of slice thing

d. takeaways - chicken and cheese wrap, french fries, 2 pieces of chicken (fried)

yesterdays:

B: Oatmeal with 1 tbs PB & 1 tbs AB, raisin toast w. cream cheese spread, hot tea. 

S: Banana, glass of milk, chunks macadamia nut milk choc.

L: Grilled WG tortilla wrap w. sundried tomato and olive tuna w. cheese & lots of lettuce, apple. 

D: Grilled garlic pita wrap w. shredded beef, cheese, salad.

S: Went to the movies tonight to watch the proposal (funniest movie ever!) so i indulged in a yummy iced espresso frappe w. whipped cream, popcorn, chips & lotsa chocolate!! :D

Todays:

B: Oatmeal, choc soy milk, cinnamon stirred together with creamy PB, mango slices.

S: Sweet n salty cashew nut bar.

L: Cheese burger w. soy milkshake.

D: Beef Roast w. English stuffing, steamed veggies.

S: Kiwifruit gelato w. tim tam bikkies. 

Hey guys!  This is my second post on here. (My last one being like a month ago!) I have gained 5 pounds since then.

breakfast - vanilla yogurt with blueberries and granola mixed in, a glass of milk, some watermelon on the side

lunch - went to a restaurant with my mom and had a chicken club sandwich (multigrain bread, chicken breast, mustard, lettuce, and tomatoes) with a side of steamed broccoli. plus I had some Italian wedding soup as an appetizer.

snack - peanut butter cookie luna bar

snack - red vines and mike and ike's in the car!

dinner - hamburger with ketchup and mustard on a WW bun. veggies on the side (carrots and cucumbers), big glass of milk

snack - ice cream sandwich, peanut butter on pretzels (yummm)

Its been a looonnnggg time since I posted here, but I have been doing good, and slowly increasing my calories.

Heres yesterday for ya'll:

Breakfast: english muffin, 1 scrambeled egg, 1 slice of mozzarella with ketchup for dipping, 1/2 a golden delicious apple  and some coffeee

Am Snack: 175g Vanilla Yogurt, 1/3 cup all bran

Lunch: whole wheat pita, 2 slices deli turkey, 1 slice mozzarella, 2 tsps mustard

with 10 baby carrots, 1/2 golden delicious apple, 10 Kashi TLC Crackers, 1TBSP cream cheese and 250 ml mango jucie

Early PM Snack: Maple Nut Clif Bar and Soy Milk

PM Snack: 1/2 an english muffin with 1 banana, 1 tbsp PB and 250 ml soy milk

Dinner: whole wheat pita, salmon burger, laughing cow cheese wedge, ketchup with some baby carrots and 591 ml of gatorade

High Energy Snack: 2 mini soft chocolate chip cookies, 1 chocolate pudding cup, 250 ml chocolate milk

Hoping for a good weigh in Tuesday, here's hoping :)

Ughhh I am STUFFED. I didn't eat lunch til 2ish and then at 5:30 my parents come home and decide it's time for Olive Garden! Needless to say, it's been a big food day.

B: straw/cream cheese Danish, oatmeal w/ 1 tbsp PB, vanilla yog w/ ½ banana & granola, coffee

L: chicken & cheese on WW roll w/ dijon mustard & lots of veggies; peppers, carrots, & pretzels w/ hummus; watermelon slice; lemonade

D: Minestrone soup, cheese ravioli w/ marinara sauce, frozen berry bellini mixed drink (SO tasty!), & ½ breadstick @ Olive Garden! (I am STUFFED.)

Probably no snack tonight. Maybe some tea or hot cocoa.

Breakfast:  1 container Fage Total (full-fat) with honey (250 calories) with 1/4 cup slivered almonds (170) mixed in.  english muffin (120) with 2 TB peanut butter (190) and 1/2 banana (50) = 780 calories

Lunch:  1 can Progresso Chicken Noodle Soup (200) with a medium bagel (275) with smart balance (80) and a fresh peach (50) = 605 calories

Snack:  Kashi GoLean Peanut butter & Chocolate bar (290) with 12 oz whole milk (225) heated up with coffee and 1 chocolate carnation instant breakfast (130) = 645 calories

Dinner:  Amy's Black Bean Vegetable Burrito (280) with sauteed spinach with EVOO and garlic (100) and 12 oz Odwalla Super Protein (285) = 665 calories

Snack:  2 frozen waffles (190) with chocolate syrup (100) and 1 cup strawberries (50) = 340 calories

Total:  3035 calories

Breakfast: Bowl of kashi go lean cereal and cheerios w/ a cut up banana and blueberries w/ skim milk

Lunch: CHIPOTLE!!! (had to have it one last time before I leave for England) ---burrito bowl w/ cilantro lime rice, black beans, chicken, tomato salsa, corn salsa and tons of lettuce

Snack: apple

Dinner: whole wheat tortilla wrap w/ turkey, slice of prov chz, mustard, spinach leaves w/ side of peas, red pepper slices, jicama slices and some cherry tomatoes

Snack: 1/2 cup dry oatmeal w/ 1/2 cup milk w/ a hot chocolate packet mixed in

b. porridge made with skim milk, cinnamon, yoghurt (400)

s. roll with slice of cheese, few gummy sweets (250)

l. toasted sandwich with chicken and cheese, mini muffin (650)

s. yoghurt with yoghurt covered raisins (250)

d. chicken, cheese, bagel (700)

s. icecream with chocolate sauce, weight gainer shake (650)

TOTAL : 2900 

Breakfast: 1 cup Kashi Autumn Wheat soaked over night in 6oz vanilla soy milk (plus some cinnamon) In the morning added: 1 sliced banana, handful dried cherries and 2TBS creamy peanut butter. Also had a cuppa coffee with vanilla caramel creamer.

Snack: Fage 2% with 1/4 cup mix of almonds and walnuts, two scoops of raisins and some honey

Lunch: 2 sliced whole grain bread with 1/2 an avocado, about 2TBS hummus and 1/2 a sliced bell pepper. Corn and broccoli with dressing. Cottage cheese with chopped apple and cinnamon because I love cinnamon today.

Snack: Banana bread larabar

Dinner: will be about 4oz salmon off the grill with lemon-herb butter, stir-fry made up with 1c. brown rice and sugar snap peas, 1/5th tofu, tahini and olive oil. 3 dark chocolate squares.

Snack: probably going to go with my current favorite - vanilla fro-yo with chopped nuts, Nutella, and mixed-berries melted up in the microwave with some brown sugar and cream (makes 'em into the best pie-filling ever!)

this is yesterday:

breakfast: HUGE bowl of cereal

snack: Italian water ice at work

lunch: chicken & vegetable quesadilla, an orange

snack: slice of strawberry cheesecake (:

dinner: 2 slices of pizza with a Coke

it wasn't the healthiest, but it was goooood. except I apparently forgot how much I don't like soda, and I drank so much of it that I immediately felt sick afterwards. I'll stick to Snapple

b: cinnamon oatmeal w/ baked apple & almonds on top, w/ cranberry juice alongside.

l: quizno’s guacamole veggie sub on whole wheat, & sweet chili heat doritos!

s: peanut toffee buzz clif bar & green machine naked juice.

d: eggplant, chickpeas, & tempeh in tons of garlic sauce.

s: cinnamon baked plantain & mango, & raspberry lemonade.

total ~2600.

Pre-run: Dried fruit and coffee

Breakfast:(Didn't eat until around 11am..thought I was going to pass out. Coffee + workout + having to look at apartments and not having food til hours later = bad idea. But it was deeeelish so worth the wait :D) Oats with pumpkin pie mix(bought the wrong can, but it's packed with calories so oh well :]), soy milk, pb, vanilla soy ice cream, and granola. A small slice of banana bread.

S1: Kind nut bar, Pina Colada slurpee.

S2: Apple, coffee, more banana bread.

D: Veggie patty on a large ww bagel with mustard, lettuce and tomato, sugar-free rockstar(ugh)

S: will be soy ice cream with melted berries and carmelized bananas and granola!

 

ECW-hi, ive seen what your height+weight are, y r u running?  i understand that excercises eases the stress of gaining but running is the worst.  youve said that u have leg or nerve probs, y running?????!!!  please reconsidar walking or yoga instead.

I've honestly been struggling with this, because I did have exercise bulimia in high school, and I am worried about that hindering my recovery.

But I am going to physical therapy once a week for my spine, and my physical therapist actually said it's a good thing as long as I don't over do it(I only run about a mile at a time, 1-2 x a day)

I do walk anywhere from 1-3 miles a day as well(out of necessity, no car currently) and do yoga too :)

ECW-does ur therapist know u run 2 miles AND walk 2 miles a day, that is A LOT of a ctivity for someone at such a critical weight.

yes, it does hinder your recovery.  your body needs to rest.

u can excercise later, after u gain.

now, ur only damaging ur body and extending the hell of being in the ED world, dont u just want to get it over with???

Breakfast

  • whole wheat wrap with 2 slices turkey, 1 slice mozzarella, 1/2 cup spinach, 2 tsps mustard
  • 10 baby carrots, 1/2 golden delicious apple, 10 Kashi TLC Crackers, 1 TBSP salmon cream cheese, 250 ml mango juice
PM Snack
  • 175g Raspberry Yogurt, 1 Banana Cookie LaraBar
Dinner
  • Veggie Burger on a whole wheat hamburger bun, 1 slice processed cheese, 3 tomato slice, 2 tbsps ketchup, 3 tsps mustard 
  • Side of 10 kashi TLC Crackers, 10 baby carrots, and some banana
  • 591 ml lemon lime gatorade
Supplement
  • Chocolate Boost
High Energy Snack
  • 2 mini chocolate chip cookies, 100 cal pack of breyers cookies n cream ice cream
  • 250 ml chocolate milk
First time trying boost, and I gotta say, if anyone needs to up their cals, but cant imagine eating anymore in a day, this is the way to go. Tastes great, and not to overwhelming to add into a day.

Hey guys! Feel like I'm finally learning to balance things. Yes, I still think about food a lot, but I'm realizing that it doesn't have to be the main event. Food is nourishment. It's like gas in a car. You need to add gas every so often, and on days when you're running the car more, it uses more gas. DUH! 

Today was weird b/c I had therapy at 12 (honestly, why do they schedule me at lunch hour) and then I went shopping w. mom, so "lunch" was on the run!

B: bowl of cereal w/ granola, dried fruit, & banana mixed in, coffee w/ creamer (50)

S: cup of choc soy milk, oatmeal raisin Luna bar

L: Muscle Punch Smoothie from Smoothie King! this was my first Smoothie King experience and it was delicious. I think he was surprised that I ordered something called "muscle punch", but it had wheat germ and protein powder, plus strawberry and banana. YUM!

S: sargento pepper jack string cheese 

D: cereal w/ skim milk & handful of nuts; Healthy Choice Café Steamer meal; V8 Splash

S: tea; COW w/ 1 tbsp PB; luna mini

ecwk6: okay if you used to use runing and excercising as a way of bulimia you need to find the strength inside of you to STOP COMPLETELY.  you must overcome this and you need to stop running.  You are hurting yourself and everyone on here really cares about you and we dont want you getting worse.  Whoever said having that much movemnt and excercise in one day was completely off because that could seriously hurt or even kill you.  Sorry to be so negative.  but its the truth hun...please stop before things get worse

my eats yesterday:

b: 1/2 cup oats, 1/3 cup milk, wheat germ, pb, honey, strawberry and boysonberry preserves, strawberry stoneyfield yogurt with more wheat germ, and a nectarine

l: 2 slices ww bread with a tofu spread i made((tofu, honey, dijon, onions, cucumbr, bell peppr, black beans...all mushed together)) and some mango peach salsa and lettuce, a glass of milk, some strawberries and a kiwi

s: cherries and a caramel nut brownie luna bar

d: mother daughter dinner so we made a panko/rosemary/eggwash rub to put on our fresh tilapia and baked it.  made brown rice with swiss cheese and carrots and red bell pepper put in, asparagus cooked in butter, milk, blueberries, and we topped the baked tilapia with a watermelon/jalepeno salsa....soudns wierd but it was really good

s: stayed up realllllly late making random goodies so i had a plum, some cherries, an almonds and apricot kind bar, chocolate underground stoneyfield yogurt with wheat germ, licks of pb fudge batter and muffin batter

 

todays eats:

b: chunk of that pb fudge, a nectarine, a ww english muffin with homemde almond butter and strawberry preserves

l: 2 slicces ww bread with pb, applesauce, and cinnamon...and some licks of brownie batter and a brownie a little later that my guy bestie fed me...haha the same one that made the extreme pb milkshake for me...oh yeah he added pb to the browniess lol

d: ugh i was watching the degrassi premiere aka my obsession hehee and my friend was like no ur waiting till after the show to get food and WOULDNT LET ME EAT UNTIL NINE!!!! ughhhh thats wen the show ended and i was like ravenoussss and pissed cuse i was starving..that was the longest i had been witout food in a long time...but yeah i took a chicken pattie and put it between a hamburger bun with ketchup, lettuce, sliced tomato...glass of milk, an apple, some watermelon, handful of craisins, and lots of tatertots

s: banana, strawberry stoneyfield farm yogurt with wheat germ and an apple pie lara bar

ugggh sweets upset my tummy...and i did alota batter licking...so my tummy is uncomfortable at the moment....and tomarrow forth of july so there will prolly be lots of sweets and my friends always make me eat them even though i dont enjoy them...this should be fun...sorry for the bad attitude tonight guys....no sleep last nighttttt so im cranky
