Weight Gainers: What did YOU eat today?


I am copying the many times copied thread, "What did you eat today?" in hopes of helping some of those who are just starting to gain and have no clue what to eat. I know that when I began weight recovery, I was eating tons of low-cal foods just because that's what I was used to. I learned the hard way that dense foods are essential to weight gain when you have high caloric requirements (at one point I needed 4500 cal to maintain my weight on BEDREST). Perhaps newbies can get some ideas if we post our weight gain meal plans! Even if you're not gaining anymore, grab an old one and post it!:]
Please note that every body is different and some will need more or less calories than others to gain. This thread is just so that you can get an idea of what you need.
Oh, and yes, I'm breaking the "no calories, no portions" rule, since it is pretty helpful in this case. If you want to post cals/portions you can. I just ask that you don't post if you're not eating enough, though as this is a weight gain thread, I would hope none of you are undereating.;]
I'll start....
Breakfast (875 cal)*

  • 1/2 cup oatmeal (150) cooked with
  • 1 cup evaporated whole milk (300)
  • 1 mashed banana (100)
  • 2 tbsp peanut butter (200)
  • 1 tbsp ground flaxseed and cinnamon to taste (50) 
  • 1 hard-boiled egg (75 cal)

Morning Snack (300 cal)*

  • 1/4 cup mixed nuts (200)
  • 1/4 cup dried apricots (100)

Lunch (660 cal)*

  • 1/4 cup rice cooked in 1 cup chicken stock (300) and
  • 1/2 cup canned or cooked chickpeas (145) and
  • 1/3 cup shredded cheese (150) and
  • 1/4 cup each onion, peppers, and tomato (30) cooked with
  • 1 tbsp olive oil and curry powder to taste (120)

Afternoon snack (390 cal)*

  • 1 serving baby carrots (35)
  • 1/4 cup hummus (155)
  • 1/4 cup mixed nuts (200)

Dinner (875 cal)*

Evening snack (480)*

  • 1 cup plain whole milk yogurt (180)
  • 1/2 cup homemade granola (300)

About 3600 calories :]

hello all. so it was not the best food day....actually looking back it hasnt been too bad, just a bit more "normal" and I'm making up for it now with dinner and the snacks I'm planning for later.

I had a good breakfast of blueberries, an apple, and grapes, and I made french toast out of 2 waffles I had made and frozen a while back so that added an egg, some soymilk and lots of honey.
Then I had a small salad and carrot sticks as a sort of snack since I was going out to lunch.


Lunch was where thigns got tricky. We went to this fancy place around 1:30 and they were serving brunch so I got some eggs and fruit plate. I think it was about 3 scrambled eggs, a side of fruit, and there were hash browns but I don't eat those :X We were going to watch the batman movie right after lunch but one of the guys we went with is the general manager of the restaurant so we ended up having to wait for him to close up (like 1 1/2!) and ended up going to a much later movie. I started getting paranoid since I hadn't had that large of a lunch and I knew the movie was going to be 2 1/2 hours long. I had a sort of mini anxiety attack and tried to find excuses to not go to the movies because i didn't think I could last that long without food and was not going to get popcorn or candy. Then I remembered they have a marble slab outside the theater so I got reallly pushy about HAVING to get ice cream before the movie even though we were late and they technically dont allow ice cream in the theater. But I got it quickly anyawys and snuck it in. My friends probably thought I was insane. Oh well, at least I didn't pass out or anything, I really can't go more than 3 hours or so without food!

Dinner I made a fava bean, peas, spinach, and mushroom saute with lots of oil and curry :) along with a cucumber, cream cheese sandwich and some pomegranate blueberry juice.

for my snack I'm thinking of trying peanut butter banana oatmeal. I know i defintely need my peanut butter fix and I want oatmeal too, but I've never put the two together so i guess I'll see how it works out. Would you guys suggest chocolate in there as well?

I think I did good today. I'm really stuffedd though haha maybe I need more calorie density and less volume..

s- 1 serving bbq soy crisps

mornin coffee w/ soy milk :)

breakfast- egg whites, corn, pepper jack cheese, nutritional yeast, broccoli whole wheat pita. Oatmeal with pineapple chunks, stevia, ginger and lime juice

had to go to work, no snacks in between. got home at 4. ravenous!!

late lunch- cabbage (amazinggg!), seitan, bean dip, salsa, salad (onions, carrots, lettuce)...

s-greek yogurt w/ baked apple on top, syrup, pb

s- 2 oz of macaroni with marinara, nutritional yeast

s- 2 slices of bread with smart balance butter

s-tofu pudding with pb and cocoa, soymilk w/ carnation instant breakfast

s- kashi go lean, pumpkin, cinnamon, blueberries, cottage cheese, stevia, a lil honey...working on ittttt! :p

BUTTERFLY-traveling is always really stressful and im sorry about all the fights, i have them to when traveling and i think its partly due to spending so much time w/ the same person.  i know its also hard to eat when youre out of your comfort zone but good for you that you realize what you need to do!

PSYCHO-thanks for everything.  i love the kashi pizzas and the kashi vive cereal, oh, and their waffles, lol.  ive seen the entrees and sandwiches but havent tried them.  also, i know,  its like i lost, im so used to likng that feeling, let me continue, but youre rt to say shut up ED!  eating to satiety, whatever, i dont know how to do that anymore and its so scarey, i just eat what i preportion as what i should be having at that time. 

GIBBIT-i also need to eat every 3 hrs, its like i have low blood sugar or something.  that oatmeal sounds great, sucks that i cant eat it!

sun-

thomas' bagel+PB, apple, hard boiled egg, couple almonds~450

little more than 1 serving of kashi vive, 3/4 cup milk, fage yogurt, peach~400

~3/4 c ice cream, some raisins~180

salmon w/ ketchup, mustard, maybe oil-dont know bc my mother made it? corn on the cob, salad w/ lots of trail mix, apricot ?  dont know how to judge i guess?

apple, yogurt~250

gibbit- I mix peanut butter with oatmeal ALL the time it's soosososoos good! I love it. Before my ed I'd mix in a banana, oatmeal, and peanut butter all over for breakfast anddd it's amazing. I'd also put in chocolate syrup sometimes, or just chocolate powder is good too! Pb oatmeal also tastes good with blackberries or diced apples...tastes kind of like apple crisp...but with peanut butter...so better :D ha

psycho- I just get my B and J's at my regular supermarket, which is called Giant. I haven't seen the mini cups anywhere but there. Sooo I guess it depends on the store... you could send in a product request sheet to the store manager I guess.

agru- Hm, I have no idea how I've been progressing. I stupidly weighed myself a couple days ago and I was 108.5, so I'm probably like 109 now. Up from 90 ish. So yeah, I'd say that's pretty good. I freak out a lot though! Yeah the bagels are thomas. The pizza was pretty good, it reminded me of Italian pizza a lot!

gibbit- lol you remind me of myself. Italians have really weird eating schedules so when I was in Italy a couple weeks ago I was getting really ticked off at my parents for not buying me food often enough. They were making me (well, technically it wasn't their faults) go like 6 hours without eating, and I was going "Mom! I NEED GELATO NOW!" It's better that you were pushy though and got ice cream instead of not eating and um, passing out. And btw, I asked my dietitian about why we feel so hungry all the time when we're eating 3000 plus cals. She basically said that we aren't eating enough... and that we have to experiment around with what makes us feel full. Um, gee. Thanks?

AQUA-i actually saw the palermo pizza today bc i had to run in to get a newspaper, kashi is pretty good tho, lol. 

food shopping tomm, ideas anyone?  numbers are just number-AQUA- dont let it upset you, its great!!  sometims i feel like im too rigid w/ eating but i also need to eat more often than others, and they dont seem to understand.  like, i cant just have 1 big restaurant meal and then not eat the rest of the day like my parensts.  ive seen the B+J at both stop and shop and shop rite, if that helps, oh, i think path mark too actually.

aqua- All you have to do is put the tofu with a lil milk (I use 1/4 cup for 1/2 block of tofu) in a blender until smooth. you can add fruit, cocoa, sweetener, peanut butter, anything!. I swear it's so good. Sometimes to make it a bit denser I heat it up in the saucepan with an egg white too...You really can't taste the egg though.

Since I'm a shortie (5'3) I thought I'd gain so easily with 2000 calories when I was only 87 lbs. But I either have a fast metabolism (ehh?) or I still burn even more than that. I even stopped exercising so much, but since I work and have a gym membership I just probably do a max of 30 mins walking a day. I'm trying to eat more than 2000 to gain a little faster because I'm scared of being this thin now. I mean the scale does not move fasttt enough. It's really not satisfying anymore to know I'm so thin and people are concerned.  I had to slap myself in the face and open my eyes...

psychoj- haha perkins sucks! the regular crowd is either seniors or really obese people...I want to work at a coffee shop. I'm hoping to applyyy soon :D. Either that or world market

agru- how about some granola? I think that's what I should get, and probably trail mix. anyone have faves of these? I don't think I eat enough fat yet. it's mostly protein and carbs.

Oh and since youre such an edy's connoiseur :P, which one's your favorite ice cream?. I mean I really don't know which one to pick when I go down that aisle. hehe. and it doesn't matter to me, ice cream is ice cream and it is goood

ANGEL-i really like edy's, ive had 3 flavors so far, mint cookie cruch, triple choc, and loaded chic fudge brownie-theyre all great and after not having it for so long, i think id like anything, lol.  im a little taller than you, 3/4 of an inch that is, lol, and i think my "happy weight" is more like 130 something to be honest.  im lso about to be 25 though and am not sure how age and metabolism affect everything.  i dont have a perkins near me but i think they have their nutition info online, so thatd be a place that id wnt t og obc none of the places here show it and it makes me nuts!

hi everyone

you all seem to be doing grand - so proud of you all nd your will powers! i've not been so great. had sickness/diharea for 2 days so been hungry, eaten,then felt v.v.sick :o( i weigh tomorrow -hope i havent lost...

also, today was a bad ocd day. made my family irritated enough that my bro and dad went out for dinner to escape me :.o( i seem to ruin everything..

was a struggle but yesterday:

Breakfast: porridge made with 150ml alpro light soya milk and hot choc powder, 45g bran flakes with 200ml alpro light soya milk, sultanas, mixed seeds, strawberries  = 420ish kcal

 

Snack: alpen bar, pear = 160kcal

 

Lunch: quorn chicken fillets with lemon juice and herbs, stir fry veg = 250ish kcal

Snack: 40g bran flakes, 200ml alpro light, raisins, mixed seeds, 2 easy peel Clementine’s = 210kcal

 

Dinner: WW pita bread stuffed with soft cheese and salad, strawberries, yoghurt, popcorn - salt and vinegar flavour = 420ish kcal

 

Snack: 2 crackerbreads with cream cheese = 60kcal

 

Snack: porridge made with 150ml alpro light soya milk and hot choc powder, yoghurt, 2 easy peel Clementine’s, options hot chocolate, small bag of malteasers = 380kcal

 

*night snack* GUILTY CALORIES : porridge made with 200ml alpro light soya milk and hot choc powder, WW food doctor bagel with spread+4 slices of lean chicken, custard = 470kcal

agru- aah i know how you feel about the whole nutrition info. buttt perkins isn't the healthiest option out there, anyway. I have to know the nutritional info for things in order for me to eat them. I guess that's how most of us are, right? I mean, I'll have the ice cream as long as I know how much I'm eating, but take me to an ice cream place and I'll freak out.My healthy and happy weight was at 110, when I didn't care what I ate!

Helloooo

Todayyy I had my ultra parfait for breakfast (soy yogurt, cup cereal, 2 tbsp seseme seeds, 1 oz almonds, slicced strawberries, dried dates) and an ensure with protein

Then a turkey sandwich with 3 oz turkey, tomatoes, peppers, soycheese and nutty bread, an oz of tortilla chips, and a whole odwalla shake (blehh)

then I followed up with some lactose free icecream with melted peanut butter on it, an apple, a piece of california roll (stole it from my bro haha)

For dinner I had an ultra veggie omlette with spinach, tomatoes, mushrooms, fresh ginger, minced onions blah blah blah and cous cous with 2 tbsp seseme seeds, black pepper, soy sauce mushrooms, onions, snow peas, and some cayanne.

For a late snack I had a cookies and cream luna bar!

wow, it sees to be getting harder and harder for me to keep up with this thread! lol.  psychoj, so glad you enjoyed your vacay.  That does seem like a very active trip.  When I go away with my fam all they do is eat and lay around.  Agru, sorry the date didn't turn out so well, but it's def the a step in the right direction and as they say there are plenty of fish in te sea.  Yes, the new kashi entrees and sandwiches are amazing!! good for if you tend to be the type who has several meals throughout the day because they are roughly 240-300 cals.  Have yet to try the pizza, waiting for someone to come split one with me as I know they are pretty large.  As for the Edys, I love mint chip and I just tried the choc. fudge...so so so good!Laughing Definitely good when rying to up those cals!  Suzyroo- just keep at it, you're doing great! Try and keep yourself distracted so that you don't overexercise, maybe watch Tv or a movie or find some kind of art project to do.  Or if your way OCD like me start to clean lol.

As for me, I seem to be driving myself insane.  I posted about this earlier, but I'm going to be working in Disneyworld for the next five months and I'm so nervous that I will gain too much weight cause I can only assume about the eating habbits of working in a theme park.  No time for food, so have to grab a hot dog or something :( ...gross (sorry to those who thoroughly enjoy them, they are one of my danger foods).  I just wish I could relax and not think about how I am going to be around the food for once!! I want to learn to eat healthy and enjoy all the goodies in moderation.  I just know that being around people eating junk all day will not be so great because I have little to no will power against it.  Overall, I am probably just getting myself worked up and it will be fine and I'll be too busy to even think about it.

hopefully enough today

breakfast: 1 buttermilk pancake with honey topping and some orange juice 250 cals

snack: 1/2 bueno + 1/2  wholewheat toast with honey 150 cals

lunch: prunes + grapes+ 1 granola bar+ 1/2 nutella wholewheat toast  300 cals

dinner: mini light tuna pizzas + mango pommegranet salad  800 cals

that's like 1500 cals and i have to burn about 500-600 cals exercising as usual..

angeleyes- Thanks for the recipe. I have to get the tofu out of my fridge some how!

Breakfast- Van's wheat free mini choc. chip waffles spread with SNB, oatmeal with pumpkin, nectarine, egg

Snack- String cheese, Smooze fruit ice, blueberries

Lunch- Baked portabella mushrooms with pesto and provolone, chocolate mousse yogurt, TLC bar, carrots (or oatmeal honey bagel w/ cream cheese, fage 2%, TLC bar and carrots)

Snack- Berries, carrots, Yoplait kids, pudding, Boost smoothie

Dinner- Whole wheat spaghetti with pesto, slice of blackberry cobbler

Snack- Orange, almonds, Clif mojo, blueberry banana smoothie, Ben and Jerry's

Hey girlie's! I am doing better today. Last night was bad...really bad. But today is a new day, for ALL OF US! We can do this. I am going to see how long I can go without weighing myself. My first goal is a week. The scale should not determine how much/how little I eat. I seriously would throw it out the window if I could, but I think my mom and dad might be mad :)

As for the whole trail mix/granola as snacks idea, that is AWESOME! But I have another possible food to add. Do you all like dried fruit? I swear that I ate more fruit (dried) during my serious weight gaining "period;" it was insane. It is so good for you and so high cal. Most nutritionists do not recommend it to people on a diet b/c it is like concentrated calories. But we are not on a DIET! So eat away girls!(and guys)

Psychoj- The idea of a healthy revolution sounds so nice to me...I wish. What if restaurants served only healthy options, then I wouldn't ever have to worry again.  (yea, that would just be too easy)  Thanks for the kind words though and for going through the trouble of finding me their menu, I really appreciate your help!

I just got home from the orthopedist. I had my feet fitted for orthotics(sp)! I am so excited. Finally I am feeling better.(knees)

The pancakes were wonderful. So yummy, filling, and healthy! You all should definitely have some pancakes. Life is too short to have without enjoying pancakes!

AERO-disney will be great, waht is the internship in?  i loved college, seriously, the best yrs of my life, lol!  im sure youll be doing tons of walking plus, lots of ppl our age are into healthy eating so im sure there will be others looking for "better" choices, but keep in mind, daily splurges are ok.  i know its easy to restrict when traveling bc i tend to, but itll be great, youll find your niche, and have a great time!  the kashi pizza, i just leave the leftovers in the fridge, i might have it tonight actually!

RELENA-great start, 500 cals? that must be some intense excercise?!

PSYCHO-yea, my trail mix is mostly dried fruits, almonds+peanuts, and sunflower seeds, i am so happy i found it and have it daily! lol  scales suck, numbers are just that, remember--BBALL!!!!  lol, you need strength for that, keep up the great work!  howd you make those pancakes???

aero- Breakfast is my favorite too! I love carbs! SNB stands for soy nut butter, which is sorta like peanut butter. Sorry but after a while typing that out got to tedious so I just assume that everyone remembers what I'm talking about. I'm just trying to get it out of my pantry because I'm trying to switch to peanut butter. It's sort of a fear food but if I have no other options I'll have to use it. It's stupid though b/c SNB only has 10 less cals that PB... I'm so silly!Good luck at Disneyworld! I went there like a year ago (pre ED) but I don't remember anything striking me as horrifically unhealthy. But there were burgers and fries etc. You could always get a salad and load it up with cheese and eggs and dressing.

Am I the only one who has a dinner menu for the week? My family has always had a piece of paper on the fridge that says what to have for dinner on what day. I guess it's b/c we do a lot of stuff during the week and need to stay organized.. but whenever I mention this to others I get strange looks!
