Weight Gainers: What did YOU eat today?

I am copying the many times copied thread, "What did you eat today?" in hopes of helping some of those who are just starting to gain and have no clue what to eat. I know that when I began weight recovery, I was eating tons of low-cal foods just because that's what I was used to. I learned the hard way that dense foods are essential to weight gain when you have high caloric requirements (at one point I needed 4500 cal to maintain my weight on BEDREST). Perhaps newbies can get some ideas if we post our weight gain meal plans! Even if you're not gaining anymore, grab an old one and post it!:]
Please note that every body is different and some will need more or less calories than others to gain. This thread is just so that you can get an idea of what you need.
Oh, and yes, I'm breaking the "no calories, no portions" rule, since it is pretty helpful in this case. If you want to post cals/portions you can. I just ask that you don't post if you're not eating enough, though as this is a weight gain thread, I would hope none of you are undereating.;]
I'll start....
Breakfast (875 cal)*

  • 1/2 cup oatmeal (150) cooked with
  • 1 cup evaporated whole milk (300)
  • 1 mashed banana (100)
  • 2 tbsp peanut butter (200)
  • 1 tbsp ground flaxseed and cinnamon to taste (50)
  • 1 hard-boiled egg (75 cal)

Morning Snack (300 cal)*

  • 1/4 cup mixed nuts (200)
  • 1/4 cup dried apricots (100)

Lunch (660 cal)*

  • 1/4 cup rice cooked in 1 cup chicken stock (300) and
  • 1/2 cup canned or cooked chickpeas (145) and
  • 1/3 cup shredded cheese (150) and
  • 1/4 cup each onion, peppers, and tomato (30) cooked with
  • 1 tbsp olive oil and curry powder to taste (120)

Afternoon snack (390 cal)*

  • 1 serving baby carrots (35)
  • 1/4 cup hummus (155)
  • 1/4 cup mixed nuts (200)

Dinner (875 cal)*

Evening snack (480)*

  • 1 cup plain whole milk yogurt (180)
  • 1/2 cup homemade granola (300)

About 3600 calories :]

Today:

Breakfast: Organic oatmeal topped w/ raspberries, blueberries, blackberries, brown sugar, mango (pieces, not a whole), and cinnamon

Lunch: Kashi Pocket sandwich(turkey fiesta, mmm) and a mango

Snack:Organic apple

Dinner: Whole wheat (taco) pizza topped w/ sour cream and lettuce

Snacks: One cup of low-fat cherry Garcia (B+J'S), apples w/ all natural peanut butter, handful of nuts

Feeling pretty good. Actually ~2400 calories.(although not really counting...) A lot of fruit but I do not eat that much everyday so I am good :]

Goodnight, and go USA!

Okay- I tried to stick to 2500 today, though I think I accidentally may have gone way over... I didn't enter it into my food log though =__= I should..

Lunch: Tuna salad on a pita with 2 slices of tomato and lettuce, as well as 5 medium mushrooms and about a tbsp. of garlic hummus

Dinner: about 3 oz chicken breast, fried in a non-stick skillet, on a pita... and then a BOOST plus calories, because I wasn't sure if I'd had enough. D:

Snack: about 2 cups of peaches&cream corn, and a cup of mixed frozen vegetables. :D

agru- congrats on the job interview! I bet you'll make it. And that's great that you went and bought all that food haha, makes me hungry! You have to let me know if that kashi pizza is good; it sounds good but I've never bought it because frozen meals sometimes disappoint me. I also have the bruschetta burgers they are amazing!

gibbit- glad you're putting yesterday behind you andd moving on. mm your meals sound yummy! :-)

psycho- glad your apt went well!

aqua- just wondering like agru, is almond butter sweeter than peanut butter? Is it yummier? haha i love pb buttt i'm curious if almond buttert could beat pb :-O (like agru, I like sweeter better than salty- my pb is low sodium)

ok todayy, I actually felt I had a lot of energy and worked out. It felt really good, and I know I'm not supposed to do it heavily, but I really really missed it and just had to (only did 30 mins + strength training). Besides, I've been eating a lot and ate back my cals too.

today i've had:

b-2 egg whites, veggies, nutritional yeast, hummus. Pb, blueberries,   puffed millet, cinnamon

s- oatmeal w/ pumpkin, cottage cheese, cinnamon (pumpkin pie- like!), sf maple syrup, vanilla, reddi whip

s- banana, cocoa powder, stevia, almond breeze, ice-----amazing recovery smoothie after gym :-)

l-lentils, kamut & quinoa spirals, spinach, tomatoes, nutritional yeast, hummus. frozen Greek yogurt & soy milk w/, baked apple, pb, sf syrup,

s- mighty bites cereal

d- lentils, whole wheat pita, soy cheese, veggies, olive oil

s- popcorn w. sprinkled cinnamon, syrup, vanilla, and blackberries all mixed in. soooo yummy

s- cup o warm soy milk w, nutmeg, cinnamon. :-)

hey ppl-

im making an edit to what i ate today, adding ~tspn PB to dinner making a total of ~1860  tomm will deff be much much higher in cals!

PSYCHO-deff a very organic day, natural day!  did you make the pizza or store bought?

ANGEL-ive had a diff kashi pizza and its great, bought it 3 times now i rhink so i thought id try this one.  what was the 30 mins of cardio you did? so the frozen greek yogurt+milk, thats a shake? like an ice cream over the apple?  i guess you take like 1/4cup yogurt and mix and freeze?  i just eat the 6oz containers or the ones w/fruit attached.

agru- i took like a cup of greek yogurt and 1/4 cup of soy milk and froze it for an hour then put the warm baked apple on top, syrup, cinnamon, peanut butter, and mixed. its really good :-). I can't eat those fruit yogurts and stuff cause I'm vegetarian and they have gelatin..so oh well, I gotta make my own inventioins! :p. oh about cardio, I only did elliptical for 30 (could not make myself go slow; that's why I have to restrain from exercising so much..). But elliptical's not so bad right? I meannn I probably shouldn't be doing it every day yet, but I felt relaxed?

oh yeah i just had 2 slices of whole wheat toast w. smart balance. yummy

Freaking out again. GOD, I need to stop weighing in daily, but I've jumped a lb in a day again. I don't get it, why won't it go down!? Half of this has to be water and it just WON'T go down! I feel like crying. .__.;

I'm still eating, but I feel bloody lousy.

angeleyes137-dont worry about over doing the excersise its only 1 day an u ate back the cals so it doesnt matter if u burned more than usual...oh an weight bearing excersise like what u did is good for the bones (as long as its not overdone) so its all good :) some days i have more energy an go for longer walks while other days i dont...thats what normal ppl without eds do...they excersise more when they have more energy some days an do less other days....its all part of learning to listen to the body an beat the ed :)

lalabanana- hun try stay positive , i know its very hard with the crap ur going thru but if u give in an restrict the ed is winning...but right now your fightin it despite feeling crap so well done :) and im siure the scale my go down soon. how many cals are u eating every day?

Sorry this is not at all related, but, in the competitive spirit of things - GO UK!!!!!!!!

Hey all: sorry i dont post yesterday, i went to my grandma's and didnt get back from yoga till late. I enjoyed it but i didnt get the same endorphine, heart pumping, adrenaline filled rush that makes me feel so happy and healthy and alive when i go to the gym. I am trying a dance class on thursday and another yoga class on Sunday. My mum says when i am a bit healthier i.e weigh more, i can do some higher energy class and maybe go back to the gym.

I am haveing problems with the 'im so fat' and 'everythin is flabby and horrble' thoughts today. Mostly focoused on my tummy, hips and lower back.

Good news is i made it to 2300 yesterday and if i follow my food plan i should make it to 2300 today also. Thank god for nuts!!

peanut_butter: hahaha.. Go uk too!!

Lala: Stay posotive, i know u can do this. You have been really inspiring to me sice i started recovery. Remember your body needs this, plus i dont think it is also weight-weight. Most of its probably water weight.

Agruskin: I was going to suggest to you that pasta might be a good dish for you to cook. I know you dont really like to cook but pasta is so simple, easy and really quick: All you have to do is boil it, add sauce (use a store bought  one to make it extra quick and easy) and some grilled or pan fried (in olive oil for extra cals) chicken or some other protein. You could mix in prawns, shrimp, beef...anything and it would make a good balanced meal. Plus stir in some veggies and it would be a way of inclding them in your intake.

Breakfast: Oatmeal made with semi skimmed milk, tbsp peanut butter, tsp cocoa pwder, sliced banana and 7 sliced strawberries

Snack: Four oatcakes with sundried tomato and basil houmous (yummy!)

Lunch: Whole wheat roll with cheese and salad. Activa rasberry fruit layer yogurt. Small apple.

Snack: Trail mix (all sorts of stuff in it. Picked it up from the store yesterday)

Dinner: Baked potato, small tin tuna, tbsp light mayo and steamed veggies. 200ml glass milk.

Snack: Options hot chocolate made with 400ml milk.

Anybody know any good granola's you can buy in the uk. I wish i could get the bear naked granola. The only one i have seen is Quaker oat granola..is there any others?

Aussie and Butterfly: Thanks. Heh. I'm at 3800-4000 every day, average. I know I did a lot of damage in a short time, but I still can't comprehend why this weight is FLYING on. I honestly thought these sort of numbers would well and truly get my metabolism going again. I don't eat lots of salt and drink lottts of fluid, so am not sure why I'd be retaining otherwise. >__<

Go go UK! XD

lalabanana- how much were u restricting on b4 u started recovery? and did u jus go from eeatin little to 4000? or did u do it gradually? how long have u been steadily gainin for now? cause it really doesnt seem right, an if your takin in 4000 there is no way ur gainin a pound aday....ur bmr is not 500 so?

just got my results .....i got the grades/points needed for the college i want :) now i just have to wait  aweek for actual college offers...fingers crossed :) im sooooo happy , i studied so hard and i had som much ed stuff to deal with this year ( prob wudda done way better if i hadnt had ed) but still got what i wanted :) ha sorry had to tell some one lol xxxxx

I've been following this thread for a while, and i'm a guy who had an ED, 6'4'' and was 10stone 10lbs on scales that seem to weigh you about 4lbs heavier than you are so i can only guess i was more like 10 and a half.

ok so i wasnt too dangerously underweight but i still want to gain.

new scales register me now at just under 11, old ones say 11.3 so ive gained a fair bit since being my lightest.

but im over that ED pretty much, now and have stopped obsessing so much over food, and over training, ive been doing weights and other stuff to try put on some muscle, and i thought id just get in on the foodie action.

what ive had today is.

(trying not to count/weigh out things too much so i can be "normal" again hah.

breakfast = sainsbury's basic muesli 70g? (250) (probably the best one as its got no bloody added sugar for once) with skimmed milk (50) & whey protein shake with water (100).  ~(400)

snack = home grown apple (50)

snack = 2 eggs scrambled with a touch of milk and some ham (190)

lunch = 3 sardines, (200) wm pita (140) salad (30?) (370) pobably more

snack = orange (60)

snack = tin of tuna with some sauce (150)

weight seems to be coming on easy enough, Even though i didnt think i was eating all that much. (some calculators say i need 2600 to maintain without ex)abs seem to be hiding away now though :'(.  wish i could eat even more and get away with it tbh :))),

i look forward to posting and giving what advice i can.

welcome t17 :)congrats on beating the ed an ot obsessing over food too much anymore, its a hard cycle to get out of!an the counting thing is hard right? like once uve done it for so long it jus comes almost mechanically as soon as u see food lol....well thats what i found happened with me anyway. if your looking for other muesli/granola without added sugar id suggest going to a health food store like where i live we have holland and barret an they have some great muesli mixes so u dont get bored. if your gaining weight really fast an it doesnt seem right your metabolism could stillbe slow from if u restricted alot before whn u were underweight....u usually need to give it a boost by eating alot to make it speed up...well thats what alot of ppl have  found was the case with their metab anyways...im still dealing with my slow metab too so i feel your pain lol :)

im building myself up for tonite an tryin to keep it in my head that im gonna order pasta an not freak at the retsurant...no salads tonite. and if i go for a tomato based one i think il be alright....like there not nearly as bad as those heavy cream based ones right? i jus need to try push myself outta this comfort zone abit more...an im so used to eatin only food that i cooked so restaurants are always hard cause who knows how much fat and oil the chefs use......wish me luck lol

i had 2 bowls of pasta last night even though i knew it was lots. it was after a wing chun lesson though.. yes chefs tend to overdo it slightly on the olive oil or other fats, but you have to accept it as part of your diet, and eating out is a treat anyway so try enjoy it, dont worry about the carbos or anything geta a nice tomato and basil or (i dont know if your vegi) a seafood pasta, i pretty much hate all creamy sauces which is good for me i guess. but just enjoy it :).

try to order what you WANT not what you think you SHOULD have. that's what ive been trying to do more and i feel happier with my choices. (my brain is more programmed to choose healthy things anyway so it seems)

psychoj: Glad to hear you had a good day. I am so impressed with your maturity and positive attitude. It is wonderful that you are striving for recovery now. You do NOT want to waste another minute of your life on this obsession.

gibbit: Thanks for answering my question. Your internship sounds really neat. We do seem to eat in a similar manner. You are right about dairy. I am afraid of non nonfat dairy products. For years I avoided all fat. Recently I started incorporating fat back into my diet but I stick to those I perceive as being "good" fats. I think of dairy fat as being "bad." But you have inspired me. I am going to buy pizza in order to challenge myself. Human beings were not meant to spend this much mental energy calculating their intake!

I am frustrated with myself. Yesterday I did not eat as much as I intended, giving into my fears far too often. Invariably, I would then start to get afraid of not eating enough and drink a bit of orange juice just to add a few calories but I know I need to eat more substantial foods. However, today is a new day and I am determined to go to battle with ED.

Yesterday's intake:

breakfast: 1/2 cup Bob's Red Mill Muesli cooked w/ 1/2 scoop whey protein powder and 1 cup nonfat milk topped w/ handful blueberries
Ezekiel bread w/ 1 tbsp. almond butter and sliced strawberries
orange
lunch: veggie soup puree w/ 1/4 cup peas, 2 tsp. olive oil
2/3 cup brown rice
salad w/ 4 oz. turkey tenderloin, eggplant hummus, and sunflower seeds
bit of of
snack: 3/4 sheet ww matzo cracker w/ 1 tbsp. peanut butter
smoothie (oj, whey protein powder, nf soymilk)
peach
dinner: black bean and mushroom chili w/ 1 tsp. olive oil topped w/ yogurt
3 oz. tuna
red bell pepper slices, sugar snap peas
broccoli, broccolini, grape tomatoes, sunflower seeds in hummus sauce over spinach
small glass of oj
snack: 1 cup nonfat yogurt w/ lots of mixed berries
nonfat soymilk w/ cinnamon
watermelon

Lala-Sorry the weight seems to be piling on. But your body is singing praises as it is :]

Aussie-Good luck! I am sure all will go well. Mmm, whole grain banana bread! Glad you could enjoy it. Go get that pasta! You will enjoy it more than a salad I bet.

Butterfly-It is fine! I really love classes that they have at my gym! Have you ever tried a spin class? Glad the yoga went well.

Agruskin-Yes the pizza was homemade with organic whole wheat flour+a little unbleached white flour. (Other stuff went into it as well!) I am a "famous" whole wheat dough maker in my house. It was a very all natural, organic day! Yay!

Angel-I am going to have to try that oatmeal/popcorn recipes. So amazing looking. Thanks!

Feeling good today :-] Positivity is awesome. Just a pretty relaxing day, not much I have to do other than PT exercises. I might go to the gym. Clean the kitchen. Stuff like that!

Breakfast: Big bowl of Heart to Heart(original) w/ skim milk, 1/2 banana

how do you know which scales to trust?

Last week, I weighed myself pn my friends scales and I was 41 kg, so I upped my intake to about 2300, however - now, my aunt's scales say I'm 44kg.... in a week! Now, is it possible that I have either a) gained water weight or b) 1 of them are dodgey scales? It's so confusing, and stressful, as 44kg is in the middle of my dr set target range.... I don't know what to do, and eating has suddenly got really hard....as in 600 kcals by 4 o'clock....

agru- Those all sound like great weight gainers food! Yep, the tacos were old el paso.

alysha- NO! You shouldn't log anything! It relieves so much stress when you don't see what you've eaten laid out in front of you like that!

agru and angel- Well, some almond butter is salted and some isn't. I've only had the unsalted kind, and it's pretty sweet. A bit milder than PB though. I like them both equally, it's just that PB is cheaper! I'm going to try to make my own almond butter soon though, maybe tomorrow? And angel- Have you tried Stoneyfield Farms yogurt? It has no gelatin.

aussiegirl- Good luck times 5608460978! It lots of yummy snacks to calm your nerves!

peanut_butter- If either of those scales were digital, I'd go with the digital one. But it is entirely possible that almost all of the gain you saw was water weight! Try not to weight so often and your weight won't jump around so much. Sorry this has been getting harder for you. Just remember that restricting isn't going to do any good.. it's just going to un-do all your progress. Try adding dense foods to things you already eat, like oatmeal, so you won't feel stuffed and get the "I am fat" feelings. Hope it gets better!

Ugh, I had to get a lab test done today- the kind where they draw your blood. So since I'm a safe weight now, I had to fast before! Now I'm super super hungry. I have therapy today too.

Breakfast- Plain oatmeal, WW English muffin w/ SNB, nectarine, egg

Snack- Almonds, 1/2 an apple, raisins

aussie- thanks girl! I will try to take it easy on the exercise. I just feel so energized lately again, it makes me happy :-). I remember coming from school some days and just wanting to take naps all day from my lack of energy...yet i'd still go to the gym for like an hour :-\ but yeah, today i'm thinking i'll take a walk, or maybe not even. I work for 5 hours (hostess) so that's enough walkin? hehe. Oh and congrats on your grades! I'll cross my fingers for you too, you deserve the college you want! I'm in your same boat too, I had so many ed issues that I could've done a lot better in school...but oh well, this year's a new start :-)

yeah, sometimes I have to go to italian restaurants with my friends, and I just get some kind of pasta with marinara. I'm still scared of those heavy cream ones too haha. I used to be a fan of those things, could eat like 2 lasagnas without caring. aaah i miss those days!

psychoj- you definitely should try my "creations"; they're amazing hehe :p (idk if they can beat your pancakes though ;-) )! ohhh and go USA!

peanut_butter- I usually have issues with scales too, that's why I try not to weigh myself so often. At the doctors I weigh 95 lbs, at my house I weigh 88 (in a super accurate scale?), at my friends I weigh 90. Sooo I have no idea! I go with my scale though, because its relatively new and I do it in the morning when I have not yet eaten. Plus, it's the one I weigh less in, so I wanna get my weight back up to normal with just that scale, regardless if i'll weigh more with other ones.

aqua-yeah, I've tried stonyfield, and it's not bad! But I just get greek yogurt because of its protein content. Plus here stonyfield is more expensive for me, so yeaah, I'm cheap. I've come to love greek yogurt though :-). mm and maybe when I run out of my pb tub I'll try the almond one...sounds yummy

ok, speaking of scales...does anyone have problems not measuring? I know I tried not measuring food out with tablespoons, cups, and scales, butttt I couldn't do it. it's like so hard to get over it. I hate having to take out those things every time, and it's not "normal", y'know? Normal people just eat as much of it as they want, but I can't get myself to do that yet. I mean I mainly do it now so that I don't undereat, but what about in the long run? I don't wanna live all my life measuring food, it's just not normal to me..but I don't know if i'll ever be able to get over it..Has anyone overcome this? Or are we pretty much destined to have some kind of "voice" for the rest of our lives? Like, now that I know so much about nutrition (i pretty much was teaching my dietitian some things???), it sucks to think that I'm stuck with it for the rest of my life. Will I ever not care about how many calories, how many grams, how many servings..? I don't know, I'm eating enough calorie-wise, but it's still not completely normal.  I know i asked like 10 questions, sorry about the rant. I just had to tell someone, and all of you guys make me feel comfortable:-)

hi everyone!

so my bday is Sat and im getting a bit nervous.  the past few have been awful bc of the ED and i know food+celebrations are a way of life, but i dont want it to be the whole thing.  any ideas of what i can do-non food related?

Angeleyes- being a hostess is deff a lot of walking+excercise, maybe save the additional walking for days you dont work?!  i measure PB-but not really bc its always overflowing over the spoon, and i measure cereal, thats it.  i know waht you mean tho, other ppl dont count, measure, overanalyze...?! i think ill make the yogurt thing except i eat 2 apples a day so maybe another fruit.

AQUA-im not the biggest fan of stonyfield but i bought a few diff flavors yesterday to try.  i hate fasting, i once had to wait til 4pm the next day before eating, i ate like 1 box of cereal, this was in the thickest part of my ED too!

PSYCHOJ-you guys are all such chefs, my goodness!  dough??!!lol yay-happy youre happy!

CHARLIEBO-isnt it amzing how mature some of the ppl on this board are, despte being younger, it is deff awesome+inspiring!  keep up the attitude, get back on the horse.  i find that preplanning, altho not normal, helps ensure that i eant enough.

AUSSIE- CONGRATS!!!!!! oh, and deff get what you want-i did it last wk w/ the greek food and im still happy and proud abput it!!  have fun!  im in the US.

T17- welcome!  i knwo what you mean, i cant remember what i was loke pre-ed, what i liked and all...

LALA-sorry youre struggling a bit, but thats what we want, to gain, rt?  maybe before you were miscounting and not eating as much as you thought?  now youre just closer to your goal-yay!~

BUTTERFLY-youre doing great! i still dont like pasta bc i feel like the portion is just too small! thanks for the ideas.

Wed-

bagel, PB, apple, cheese ~400
