Weight lifting at night, and balancing calories

I was hoping to get some information about the circumstances and duration for how long your muscles try to build/rebuild themselves after your weightlifting workout.

Specifically, I was wondering if your body still builds/rebuilds muscle from the day before after while you sleep?  If you workout is in the evening after dinner (between 8PM-10PMish), and you have a protein shake/snack afterwards,  would also eating a larger than normal breakfast with lots of protein the day following a workout would have any effect, beneficial or otherwise for someone who's goal is size maintainance?

Any advise or resources would be appreciated.  I'm a zigzagger, but a few weeks ago, I've started to feel ravenously hungry the day following a night workout.  I don't know if I just need more overall calories on my non-workout days, or if this is because my body wants to replenish from the night before, or neither/both.
