Weird sandwich creations (because I was lazy)
I really didn't feel like cooking this weekend, and was just craving something different. So I made these:
Yesterday I had some Nutella left and peanut butter jar I have been trying to go through. I also had these Orowheat Sandwichthins I bought in Costco. The first "sandwich" basically involved spreading Nutella on the bottom half of the Sandwichthin layering some frozen sliced peaches and strawberries and topping it off with second half. The second variation involved peanut butter and just strawberries (I ran out of frozen peaches and Nutella).
Today I found some protabella mushrooms in the fridge and an eggplant. I also remembered I had some smoked oysters in olive oil I bought in Costco. So I "grilled" one of the mushrooms and a thick slice of eggplant on a skillet. I flavored the eggplant with crushed garlic and some spices. When they were done I spread the oysters on the mushroom and topped it off with the grilled eggplant. I think next time I will also add some sardines. ![]()

I had a craving for eggplant parm but only had frozen eggplant patties and alpine lace swiss.. i fractured my ankle so i could not go food shopping for the low fat mozz and the tomato sauce..
So I heated up two eggplant patties per the box's instructions and then five minutes before the cooking time was done, i folded and melted a slice of the cheese on each... YUMMY!!!![]()

I wanted to make chicken cordon bleu but didn't have the tools or time to pound the chicken so I instead put bread crumbs on the bottom of the chicke breast, put it in a baking dish, arranged a slice of swiss cheese on top of that, then folded a slice of deli ham on top of that. Then I sprinkled the entire business with bread crumbs and baked it. The family loved them.
I was recently in FL visiting my grandparents and aunt. My grandparents recently moved into an assisted living facility but they still own/rent their previous home. We stayed there and were instructed by my aunt to eat what was still in the pantry first. One night I made chicken chili with all the cans of Bush's Original baked beans in the panty cupboard (3 16oz, 1 28oz), a can of Rotel Diced Tomato and Chilis and shredded chicken breasts with a few shakes of chili powder. We had that with rolls. It was delicious.
It has some good stuff, but also tons of junk food. Specially in their frozen isles. Actually most of it is junk food. Also most of their "fresh" fruits are pretty bad.

I had a bit of a find this weekend:
I fancied a toasted cheese sandwich, but also something Peanut buttery... so I spread some PB on two slices of bread, sliced some cheddar over the top and microwaved it! I microwaved it on top on some kitchen paper to take away some sogginess, so the result was like when you gently fry it, kind of soggy but in a good way.
I had it with a couple of tomatoes and some cucumber. Good stuff.
Also, I've had chilli powder and coconut milk mixed with peanut butter and used in a chicken sandwich. Satay sandwich! I think next time I may even just use the sauce with chicken and veggies/ rice, for a main meal!
