Hi there all,

I might as well tell some more about myself. My name is Caroline Dennis. I've struggled with my weight since I was nine. Last year, I went on a healthy eating lifestyle change, and lost thirty pounds. Then I got married... and our world plunged into a transition of fast food snacks, frozen dinners (yuck) and fine cuisine. Now we're changing our eating and our waistline.

I have been struggling with my weight for as long as I can remember...I am newly dedicated to transforming myself into a healthy eater....I know for sure that when I eat well I feel 100% better than when I don't.....please don't get me wrong..I like the taste of foods that are "unhealthy"...I wouldn't be in this shape if I didn't...but my new "diet"....is that I'm not on a "diet"....I am making purposeful choices to eat foods that are nourishing to my body...so mostly unprocessed as much as possible...so far so good!!!

I like to cook and have some good recipies to share if you are interested!!

Hi! I've been a member of CC since Nov. 2007.  My start weight was 203 and I'm currently at 171.  CC has helped me keep the weight off.  I'm married and a mother of 4.  I do have favorite foods that perhaps you could help me prepare with less calories.   My  mother in law taught me to use applesauce in place of oil in baking recipes.  I would like know any other substitutes.  One would be, what can be used in place of eggs?

eggs! We love and hate them! I'm going to post this over to the other forum as well so its eaiser to find.

The problem with substituting eggs in recipes is that eggs often are used in recipes for their chemical bonding properties. They really do hold everything together. In this the yolk and the egg white are structurally different and actually serve two different functions in some recipes (this is why egg yolk can stay as a jelly-liquid in things like hollandaise sauce, and egg whites can be whipped into meringue). Eggs are amazing little things. 

Some recipes NEED some of the fat from the egg yolk to work out properly.

I am experimenting with some other foods, but so far I haven't found a reliable substitute.

The best thing to do is to substitute egg whites, or a combination thereof.

A lot of times people try this but they try substituting one egg white for one egg, which doesn't usually work, because it fails to compensate for the loss in volume of the yolk.

You need to substitute two egg whites for every whole egg. If the recipe calls for several eggs, put one or two yolks in with it (obviously adjusting the number of egg whites to match). This way you can cut a large amount of the fatty yolk out, but still have the recipe work.

For example a cake calls for six eggs.

You would use:

8 egg whites (replaces 4 eggs),      &nb sp;               &nb sp;               &nb sp;               &nb sp;               &nb sp;          

2 whole eggs

 

so six eggs total.

 

Or alternatively:

10 egg whites

and 1 whole egg

also equals six eggs.

 

I'm still working on other ways to substitute for eggs... especially in recipes where you have to add egg whites and yolks separately, but so far this seems to work the best across the board. Hope this was helpful!

Hi my name is Jessica. I joined CC in May 09, and have so far lost about 10 pounds. I started around 153 lbs, and am currently in the 142 range (I usually yo-yo all week about 1-2 lbs, then on the weekend when I have more time to work out, I lose 2-3 lbs). My husband and I have slowly been gaining more and more weight since we met in college, and while we both trimmed down for our wedding, the diet was over when we said, "I do." We both love to cook and experiement in the kitchen, and we over-eat because the food is so good, we don't want to stop! And after the wedding, we went back to using whatever was on sale, paying no attention to labels. It's been about 2.5 years since the wedding, and we both put on nearly 20-30 lbs! Watching the "Biggest Loser" show sparked something in both of us to try losing weight again. But this time we did our homework, and found out how to lose weight with the long-term in mind. We find recipes that are as delicious as we always ate, without the added calories, and aren't as worried about how much the grocery bill is going to be, because in the long run, we're doing better for ourselves health-wise.

I joined this group to hopefully share some tricks we have discovered for cooking low-cal with full-flavor, as well as figure out how to transform some of those foods we wish we could make, but can't figure out how to transform on our own.

As part of dieting, my husband and I have discovered how much we enjoy hiking. We love to take a Saturday, drive somewhere new, and hike the trails. Our two dogs love it too, so we make it a family adventure (we don't have any 2-legged kids, only the 4-legged variety Laughing).

I look forward to being a part of this group.
