What's for dinner? It's friday, first sunny day after 9 straight rain, don't want
to be here at work. And it's supposed to thunderstorm just as the work day ends...making it 10 days of rain.
tonight I'm having leftover Pizza Hut Veggie Lover's thing crust (180 calories/slice) I'll eat 3 slices (540cal) and have 42g baby spinach (10cal) with 10 sprays of lite honey mustard dressing (10 cal) = 560 calories
I don't normally work out on Friday, but maybe I'll do a fun video like Cardioki (Billy Blanks Jr) w/ my daughter. She likes the jumping and trying to sing.
I am probably going to have a sandwich. I weigh in on Saturdays, so today I am going to workout harder and eat better. I know it sounds funny, but on the Biggest Loser they do their "Last Chance Workout" right before weighing in. I am doing about the same thing. I Know I am crazy.![]()
I had lunch on the picnic tables outside for the first time all year. It was wonderful getting fresh air.
But i think it made it harder to come back inside for the afternoon at work! BLAH!
Dinner: brainstorming this now: sauted shrimp in garlic & onions on steamed veggies & quinoa.....?
But also baking muffins for the Sunday brunch I'm hosting and getting a cheesy mashed potato type caserole for Sunday dinner I'm hosting. Two events in one day requires some prep work unfortunetly.
Also hoping to get to the gym for a quick weight training session after work before tackling the cooking spree & cleaning frenzy!
I'm trying the Kashi Mayan Harvest Bake for the first time! Here is the description:
Plantains with roasted sweet potato, black beans and kale. Spicy ancho sauce with pumpkin seed garnish served over Kashi seven whole grain polenta, plus amaranth.
Sounds yummm..
Well because I took Friday off I planned my dinner....I had fresh grilled salmon on a cedar plank...prepared on my grill...with salad...fresh steamed corn on the cob, and brussel sprouts...I served my salmon over a bed of fresh semicooked cabbage with some salsa-horseradish sauce I made...the salmon was blackened and lightly coated with a honey lemon dressing I made with sesame seeds and orange slices...BTW it was GREAT!
