Snowed in!!?? I'm sorry that sucks!!! I live in Ohio so I can feel your pain lol!! Luckily Ohio is missing the snow storm that is hitting the east coast! For dinner tonight, since my boyfriend is working, I'm making shirataki fettechini noodles with ragu light tomato basil sauce and a wonderful spinach salad :-)

we're ordering pizza!

I had fish fingers and oven fries. Not healthy, but tomorrow is grocery day so i had to rummage in the freezer to find anything at all. LOL.

I'll be having steak and bean chili over cauliflower rice! yum!!

i don't know about dinner, but i just had chicken cacciatore for lunch.  yum!

kortlymoore- i'm jealous, i have yet to try these godsent shirataki noodles everyone has been raving about. enjoy!

A cheesy lasagna my mother made and gave me (probably not worth eating calorie-wise but... y'know) and a HUUUUUUUUUUUUUUUGE salad. I've fallen in love with salads. :3 And since I've learned of the whole 'dip-the-fork-in-the-dressing' and then eat some salad... I could have a huge bowl with just 2 tsp of my favorite dressing (zesty italian).

I'm planning on having a piece of turkey breast, baked with rosemary seasoning, steamed red chard or a spinach salad with blackberries and either a sweet potato or regular mini potatoes (purple, red & yellow ones), with a little olive oil & seasonings. Mmmm.

I am making a southwestern chicken salad with romaine lettuce tossed in a homemade picante dressing with bell peppers, black beans, & corn topped off with chicken cutlets grilled with cumin & oregano.

steamed broccoli- overcooked and then i mash it and put spray butter and ground pepper on top!  Yummmmm.

 

mmm these all sound good. I love cooking, but tonight was busy with a cake decorating class, so was a not very inspiring dinner of peanut butter on seeded bread, then a bowl of muesli with sunflower seeds and soy milk

I made a nummy quesadilla with two morningstar breakfast sausages, mexican cheese, and a whole wheat wrap.  Sprayed the outside of the dilla with a few sprays of butter and cooked in the pan until brown and crispy and melty.  Cut into four wedges and dipped that in ketchup.  Yum!

I  bought some lovely kangaroo fillets and I'm going to make a warm salad with the fillets bbq'd then sliced thinly. kangaroo is escellent low calorie, lean meat. Only 90 cal/100g! as opposed to lamb which is about 130cal/100g.

Mixed lettuce and spinach leaves

red onion

tomato

blanched aspargus

tzatziki as dressing

I wish I could find them here in Korea. I want to try them too. 

Open faced sloppy joes made with ground turkey instead of beef.  Same taste, same sloppiness, not the same in fat and cals.  Even better, it's fast and easy and a favorite among the whole family!

Tonight for dinner I had... marinated arctic char, spaghetti squash, roasted brussels sprouts (with garlic), green beans, spinach & sauteed fennel and portobello mushrooms.

Looks like lots of good dinners are being had tonight :)

Mine was turkey burgers served open face on toasted Thomas Light Mulit Grain english muffins. I used Laughing cow instead of mayo, my husbands homemade BBQ sauce, some romain lettuce, and I topped them off with a beautiful bit of gorgonzola and some black beans.

Chopped up some chicken breast and sauteed with an onion, some garlic and ginger.  When it was just about cooked, I added chopped asparagus and a little water to deglaze the pan and steam the asparagus.  Then I tossed in some cooked pasta (2 oz. dry weight).  Topped with some fresh ground pepper, some herbs and 1 oz. grated mozzarella.  Toss together for much yumminess.

 just had chicken cacciatore for lunch.

 

I don't know how to quote on here, but I tried cooking that was week, was really excited about, it tasted SO bland, i was so dissapointed, i don't know where i went wrong, it just tasted like it was really lacking in that something that would of made it wonderfull.

I'll be having Nandos lemon and herb chicken wings and mixed salad... I've earned those chicken wings with all the running around I've been doing today!
