What's for Dinner Tonight?
I am running out of ideas for healthy dinners. Please share what you are making and give me some new ideas!! :)
i am broiling striper filets over spinach, with garlic, dill and lemon, plus a side of rice or maybe garlic mashed potatoes, depending on how nice hubby is. :D
A giant spinach salad with chicken, mushrooms, red onions, and non-fat ranch dressing.
Grilled garlic-lime chicken breasts (new recipe, hope it's good), grilled corn on the cob (never grilled it before - hope I do it right), and fresh cauliflower, broccoli and carrots with a bit of light ranch. I may make some rice, too, undecided on that...
Grilling chicken breasts on the BBQ and baked new potatoes
to puh8suwrux - husks on or off on your corn? I prefer on. Soak for 20 min in lightly salted water, then place directly on the grill for about 20 min turning often. Gives the corn an awesome smoky flavor, and the silks come right off when you shuck them.

I pull the husks back just enough to clean the corn and then close again. Soak in water and then wrap in tin foil and put on the grill. GREAT!
Sounds good, but it's frozen (thawed) corn with no husks. I think I'll wrap them in foil this time with a touch of butter so I run less risk of drying them out (kids may object to too much of a flavor change, too).
Split pea soup from a WW cookbook, and perhaps toasted wheat bread.
Last night though I made spinich stuffed chicken breasts. I got the recipe online from Health magazine. It was amazing.
Potato soup with goat cheese. Its absolutely amazing and only 321 calories a serving. By far my favorite recipe of any i've ever made. If anyone wants the recipe simply let me know ^.^
celery, I had 2 pieces of pizza and ben and jerry's cookie dough for lunch so I'm just not hungry
Started with some pistachios nuts, then toasted half a bagel, topped it with a garden burger patty, covered by a sliced roma tomato and freshly chopped basil. Added some steamed broccoli on the side.
For dessert, a peeled grapefruit, and I still need to eat a bit more.
Two fried (with no oil, does that count as grilled? I do one spray of Pam to prevent sticking) chicken thighs (spiced up with some salt, pepper, garlic and onion powder) and a big salad of mainly romaine and some carrots... I'm so picky when it comes to veggies. I use light zesty italian dressing. Yum. Diet coke with my dinner.
A spoonful of peanut butter.

I ruined tonight's soup - I would love the potato soup recipe!
I'm with jewels. I had a few blobs of peanut butter on a banana, though I'm sure my ever increasing appetite will eventually lead me to the raw almonds I bought. And the banana split supplies I bought. And the cereal I bought.
