Whats your favorite dinner?

Hey y'all.  I'm a lacto-ovo-vegetarian and I'm looking for some new meal ideas, so please share!

 Here's one of my favorites for the winter:

VEGETARIAN SHEPHERD'S PIE

Melt 2 Tbsp soy butter and add 1-2 tsp dried basil and some crushed garlic.  Let sit.  Boil and mash 3-4 small potatoes.  Add the garlic/basil butter to the mashed potatoes and set aside. 

Chop and sautee in olive oil:  half an onion, some garlic, 2 large carrots, 1 can kidney beans.  Add 1 can diced tomatoes and some frozen peas to the sautee.  Season with oregano.  Put the sautee into a square baking dish, cover with a layer of the mashed potatoes (and maybe sprinkle some soy cheese on it), and bake for 30 minutes at 350.

Veggie stirfry:

2 cups cabbage

1 clove chopped garlic

1 - 2 cups fresh spinach (depending on tastes)

1/2 tbsp olive oil

baby carrots

green beans

1 tsp soy sauce

salt and pepper

sautee on low heat until done!

its divine!

I love veggie tacos- 2 corn tortillas (gluten free) , refried beans from whole foods (80 cals/.5 cup) salsa, onions, tomatoes, lettuce, soy cheese. Then I'll usually have more veggies or some soymilk on the side.
A vegetable platter.  The centerpiece is a baked potato (baked in the oven, not microwaved) with cottage cheese and fresh herbs on top, surrounded by colorful steamed or roasted vegetables.  I try to get as much color on the plate as possible.  Sometimes I make a low fat cheese sauce to go with this.  I understand that the combination of potato and dairy product produces a high quality protein.

A hearty dish that I've made with food I had on hand -- it's an adaptation of a Veg Times recipe for Tortilla Tomato Soup:

Serves 6 

  • 1 Tbs. and 1 tsp olive oil
  • 1.5 to 2 onions, peeled and finely chopped
  • 2 cloves garlic, minced (about 2 tsp.)
  • 1 32-oz. can chopped fire-roasted tomatoes
  • 2 cups frozen corn, thawed
  • 1 can kidney beans, drained and rinsed well
  • 3 6-inch corn tortillas, cut into quarters
  • 3 Tbs. chopped cilantro (or more if you like it)
  • 1 tsp. hot sauce
  • salt and fresh black pepper, to taste

 

  1. Heat oil in large pot over medium heat. Add onion, and sauté 7 minutes, or until soft, stirring occasionally. Add garlic, and sauté 1 minute more.
  2. Add tomatoes, 2 cups water, corn, beans, and tortillas. Bring to a boil, then reduce heat to medium low. Cover, and simmer 15-20 minutes, or until tortillas have broken down into small pieces. Make sure you stir from time to time so the tortillas don't stick to the pot. Stir in cilantro and hot sauce, if using, and season with salt and pepper. 
Yum!! I'm having it again tonight.  I'm not positive, but I think it's only about 250 calories per serving.

Couscous with Vegetables:

Chop onions, garlic, red or green pepper and saute the onions and garlic in a small amount of oil.  Add some frozen corn and peas and the pepper and then almost immediately add 2 cups of vegetable broth.  When it comes to a boil add the box of plain couscous (I like Near East), cover and remove from heat.  Let stand 5 minutes and fluff. 

I also like spicy food so I usually add some cajun spice to this prior to it boiling.  You can add whatever additional herbs or spices you prefer.    So fast, easy and mmmmmm good!

I make loads of soup right now, my favorite is Roasted Red Pepper & Sweet Potato.  Also, Split Pea soup with loads of carrots, celery and onion.

Veggie Bean Chili is another favorite.  Oh and a couple weeks ago I made Vegetable Nut Loaf and that was outstanding!   

omg, the Roasted red Pepper & Sweet Potato sounds amazing!  Can you post your favorite recipe??  I also love split pea...... or any kind of soup now that the weather is cold!

I LOVE burritos! Black beans, rice, mushrooms, peppers and onions...fresh pico de gallo, guacamole in a whole wheat tortilla....maybe a margarita? ;)
