What's your favorite sandwich idea?

Today I made a super good lunch and it made me wonder who else would have some good ideas. 

I sauteed 3 oz of already grilled chicken with 1/2 C veggies (I used bell peppers) and 1 Tbsp Pesto.  I Steamed a Pita and just put the mix in the middle and held it like a Gyro.  It was SO good.  Calories:294  Fat:67 = 22%.  Totally satisfying and didn't need any mayo or anything because of the pesto.

Well, for lunch every day I have a sandwich that's whole wheat bread with tomato, cucumber, lettuce, alfafa, and hummus. It's pretty tasty, and simple.

Once, though, I made a "quesadilla" by heating up one of those South Beach Whole Grain wraps in a skillet and adding chicken, a bit of ff feta cheese, some veggies, and then this tasty red pepper tapenade I found in the fridge. It turned out somewhere halfway between a quesadilla and a taco. Not quite a "sandwich" but it was super good. 

panini. two slices whole wheat bread. cheese (any kind. i LOOOVE feta or parmesan. even melted in microwave processed is good) and a bit of stir fry veggie (mushrooms, tomatoes and red peppers are my FAVE!)

tuna melts. whole wheat bread in grilled cheese maker. water packed tuna. tomatoes. sprinkled cheese. second piece of bread. grill. enjoy!!

veggie omlette btwn. bread is also great!! and gives you lots of variety!

also, putting ANYTHING in a wrap makes it taste automatically better. I'm not sure how though... :P
i like the idea of putting butter on one bread and grape jelly on another bread to make a butter and jelly sandwich.
I take gluten free bread with one slice of soy cheese then I quickly saute one ring of pepper, one ring of onion, and one ring of tomato. Then I throw on a slice of lettuce and another piece of bread and throw the whole thing in to the pan to warm/brown the bread a touch. MMMMMMMMM.

I'm not a huge sandwich person, but I found this one in a magazine once and it was really good.  It was turkey, sharp cheddar, and sliced apples.  I think maybe the magazine said mustard too, but I don't put stuff like that on my sandwiches.  I think I used whole grain white bread and it was delish.

My favorite is turkey on toasted wheat with sun-dried tomato pesto, sprouts, tomato and lettuce. With or without cheese, it's so good!

to begin with, peppridge farm makes light bread...and its delicious and good for you. my personal faves are oatmeal and 7 grain, only 45 calories per slice. i wanted to post this an i was all excited about it and then got so disappointed when i read how fancy everyone else's was but i still want to share haha.

laughing cow gourmet lite cheese bites: they are spreadable cheese with 7 calories per cube, they are absolutely delicious, and a serving size is 5 cubes but 3 cubes is definately enough! sometimes i use all 5 because there's so few calorie difference, but its really not necessary! then i put some helmann's dijonnaise...AHH! to die for! 5 calories per teaspoon! then i either just eat it like that, or with tuna! or tomato! sometimes both! sorry im so boring haha but its my fave <3

I love to have a whole wheat pita slathered w. 2 T. of hummus and then stuffed with spinach, kalamata olives and feta. Yummy and about 200 calories! I know it's not really a sandwich but I can hardly justify having 2 slices of bread anymore!

Also, I love making chicken or tuna salad w. fat free mayo and eating that with wasa crackers. That's about 200 calories, too.

And another fave is getting the light whole grain wraps and rolling up a few pieces of ham or turkey with lettuce, tom, and mustard. About 185 calories.

My sandwich of the week has been grilled eggplant, zucchini and spinach on a whole wheat pita with mozzarella cheese melted over it.   I have had this every day this week.

Wow, that sounds awesome!  Do you remember if it was red apples or green apples?

I love using whole berry cranberry sauce on my turkey sandwiches instead of mayo or mustard.   With lettuce, tomato, and onion on whole wheat bread...yummy!

I'm not sure it specified.  I think I probably used golden delicious because they are what I usually buy.

And at Thanksgiving I always make a little turkey/cranberry sauce/biscuit sandwich.  Yum!

I finally broke down and bought eggbeaters.  I have only had them in omelette form at a restaurant. 

Anyway, eggbeaters, a sprinkle of bacon bits, with light mayo on wheat bread toasted.  YUM!  I've had it twice this week.  This morning for breakfast and the other day for dinner.  Too bad I can't do this for lunch at work. 

This comes out to just over 200 calories.

Too bad I don't have any good cheese in the house to make it even better.

jam on rye bread:      &nb sp;           Y U M

4 slices of mrs baird's cal light honey wheat bread-toasted 160 cals

2 portabella mushroom tops, grilled

1/2 cup f.free mozzerella cheese 90 cals

2 slices turkey 25 cals

1/2 cup cooked spinach

very delicious

Toast the bread, grill the mushrooms, place mushrooms on bread, then in the 'bowl' of the mushroom put the cooked spinach, slice of turkey, then top with cheese and remaining bread slice.

Yum,  I've seen some good ideas!  Thanks everyone
