Whats for Lunch?!
Hey you CCers out there!!
What are you having for lunch today? Or if its already past lunch time ... what did you have for lunch today? It's important to plan in advance. Why not exchange what we have planned for today ... or tommorrow's lunch. We just might get some new and exciting meal ideas from each other!!
So, I'm making a sandwich with leftover tuna, tomato and purslane on wholemeal rusk or bread. My tuna is grilled with herbs and spices at home. So, I don't think I need to add mayo or cheese or anything else. Two plums or a pear for dessert. And green tea to end it with. Yumm!!!

I'll be having a nice garden salad with grilled chicken on top and light italian dressing. Yummy. =]
I just made some delux vegetable stir fry cooked with a chicken breast marinated in garlic herb marinate and served over brown rice. delicious! and its only about 200 calories for a delicious, filling meal. :)
Im going to have 1 burger, a bag of chips and a coke. I have been un-faithful to my diet. But starting today im getting back on track. YAY!!!
lunch today was a medium granny smith apple dipped in vanilla yogurt (about 5 oz), a couple slices of cucumber, and 1/4 cup of chicken that was cooked in a little bit of honey.
I make up enough chicke at the beginning of the week to have approximately 1/4 - 1/3 cup for lunch each day. I change up what I cook it in each week to keep it from getting boring. So far I have done BBQ, terriyaki, spices, and now the honey. I use about 2-3 tablespoons of the sauce and EVOO to cook the chicken in. That way I get the taste of the sauce, but not too many added calories. I am thinking next week I might try Sesame oil with ginger, garlic, and red pepper. (I had this sauce on whole grain linguine last week and it was delicious - The recipie is from Redbook - http://www.redbookmag.com/recipefinder/sesame -ginger-noodles-82 )

What is EVOO?
Usually for lunch I have a Smart Ones frozen meal.. they are good but everyone says I need to get away from the processed foods. It's good to see other recipes.
Today I had lunch on campus so it was a turkey sandwich on 6 grain bread (hold the cheese!) with tomato, lettuce, onion, and red peppers. And fruit salad. The sandwich place seems to be one of the healthiest options on campus.
