What are you having and how are you cooking it? Recipes would be nice!
I'm having broiled chicken tenders, marinated in lime juice and chile powder, with a brown rice and spinach dish - saute onions and garlic in olive oil, add cooked chopped spinach and saute until most of the moisture is gone, then add brown rice and serve.

i usually have a vegan soy burger, kale, tomato, ezekiel 5:19 bread, and a yogurt. sometimes ill add skillet veggies like carrots, squash, tomato, onion, garlic, zucchini, and any other veggies around. im not too good with recipes, i tend to just throw together a bunch of vegetables for dinners.
I saw Ezeikiel bread in the freezer section of Whole Foods, but didn't buy it because it was higher in calories than I wanted. It did look very healthful.
The chicken tenders sound great, I love the flavor combo of chili powder/lime juice. I'm being awfully lazy and ordering in chicago-style pizza since I'm taking my last final tonight and won't have time to cook. I'm ordering it loaded with veggies though. My fridge is pretty much empty right now, lol.
Shrimp/garlic/lemonjuice with brown rice and a pear for dessert.

For Dinner, I will be having:
Brown Rice,
Beans (A Combination of White Northern and Red Kidney)
AND
Moosewood Tomato Corn Salsa
Recipe for Tomato Corn Salsa
1 cup frozen corn kernels
2 cups diced tomato
2 tbsp diced red onion
1/4 cup diced green pepper
1 tbsp chopped fresh basil
1 green chile, minced
1 tbsp fresh lime juice
1 tsp cider vinegar
Blanch the corn in boiling water to cover for 1 - 2 minutes, until just tender
In a large bowl, combine all of the ingredients and set aside for 15 to 20 minutes to allow the flavors to develop.
Add salt, if desired, and serve at room temperature
Makes 3 1/2 cups

HK, I've tagged it! I love the combination of rice and beans. This would be good my my supper on Wednesday, since I already have Tuesday all planned.
Pan seared salmon (without oil), with a brown rice, spinach and feta cheese dish.

I love feta! And it's so good with spinach. I have to watch the salt, so I save it for a special treat.
