for the Wheat Belly diet-- Wheat Free & low carb. Sweetener should be equal to 3/4 c. sucrose. What I added is actually not sweet enough. Might try Truvia next time. can also sub equal amount of coconut milk for the sour cream and coconut oil for the olive oil.

Recipe Ingredients for Wheat Belly Blueberry Banana "muffins"

2 c. Almond Meal/Flour
1/4 c. flaxseed, ground
1/4 tsp. Sweet Drops Sweetener
1 tsp. Baking powder
1 dash salt
1 banana
2 eggs
1/2 c. sour cream
1/4 c. olive oil
1 c. fresh blueberries

Recipe Directions for Wheat Belly Blueberry Banana "muffins"

  1. Preheat the oven to 325 F. Grease a 12-cup muffin tin with olive oil spray.

  2. In a bowl, combine the ground almonds, ground flaxseeds, sweetener, baking powder, and mix with a spoon.

  3. In a separate bowl, mash the banana until smooth. Stir in the eggs, sour cream, and oil. Add the banana mixture to the almond meal mixture and mix thoroughly. Fold in the blueberries.

  4. Spoon the batter into the muffin cups, about half full. Bake until a toothpick inserted in the center of a muffin comes out dry, about 40 minutes. Cool in the pan for 10 minutes, then turn out of the pan and transfer to a rack to cool completely.
