Whole wheat banana muffins

Ingredients
1 egg
1 c. skim milk
1/2 c. unsweetened apple sauce
1/4 c. honey
1/2 cup banana
2 c. whole wheat flour
3 tsp. baking powder
1/4 tsp. nutmeg
1 tsp. cinnamon
Directions
  1. Preheat oven to 400 degrees.

  2. Beat egg, then combine with milk, apple sauce, maple syrup, and banana.

  3. Mix in remaining ingredients until just moistened (batter should be lumpy).

  4. Fill muffin cups 2/3 full and bake 20-25 minutes. Makes 12 to 18 muffins.
