Recipe Ingredients for Wholemeal Kulcha Bread

750 g Stone Ground 100% Wholemeal Plain Flour
1 tsp salt
15 g dried yeast
450 ml water, lukewarm
2 tsp sesame seeds
2 tsp black sesame seeds
50 g unsalted butter, melted

Recipe Directions for Wholemeal Kulcha Bread

  1. Sift the flour and salt into a large mixing bowl. Sprinkle over the yeast and make a well in the centre. Pour in the water and mix well to create a firm dough.

  2. Transfer the dough to a floured work surface and knead well for 10 minutes or until it is smooth and elastic.

  3. Place the ball of dough in a large greased bowl and cover with oiled clingfilm. Leave in a warm place to double in size.

  4. Knock back the dough and add the two types of sesame seeds. Work them into the dough then divide into 8 equal portions. Roll outt each portion into a 6"/15cm circle. Make a small cross in the top of each dough circle and brush with the melted butter.

  5. Cook the hulcha 2 at a time, under a pre-heated hot grill, for 3-4 minutes on each side, brushing them with more melted butter when you turn them over. Serve hot.
