Great as a side dish or as a vegetarian entree! I used an assorment of mushrooms, Crimini, Shitake, and White Button.

Recipe Ingredients for Wild Mushroom Risotto

2 T (light margarine)
6 T shallots (3 shallots diced)
1/2 pound mushrooms
1 cup risotto
1/4 cup (chablis)
5 cups (vegetable stock)
1 1/2 c Parmesan cheese

Recipe Directions for Wild Mushroom Risotto

  1. Heat 1 Tbl margarine over medium heat. Add shallots and sauté, stirring frequently, until soft and almost clear, about 2 minutes.

  2. Stir in mushrooms and cook for 5 minutes, until soft. Add rice and stir constantly for 5 minutes, until well mixed.

  3. Stirring constantly: add white wine and simmer until absorbed. Add 1 c of stock, stir until absorbed, and repeat 3 more times, until rice is soft and 1 c of stock remains.

  4. Stir in cheese, salt, pepper, and 1 T butter. Remove from heat and taste. Risotto should have a very slight hardness in the center and be soft and creamy. Add remaining stock, if desired, and adjust seasonings. Serve immediately.

  5. *Keep the vegetable stock in a pan over low heat so that it stays hot, though not boiling.
