For those who won't feel too guilty indulging in some MAC AND CHEESE!

It's not too healthy, but for those who really crave some mac and cheese and have 600 calories to spare, here is a recipe that I thought turned out great, and so did my guests who came for it:

700 g whole wheat macaroni

1 clove garlic, minced

1/2 onion, chopped

4 eggs

4 cups low-fat milk

4 tbsp all purpose flour

4 tbsp butter

300 g cheddar cheese, shredded

100 g parmesan cheese, shredded

300 g mozarella cheese, shredded

2 tbsp oregano, paprika, basil (or any spice of your choice)

Directions

  1. cook the macaroni according to package instructions, and drain (do leave a little water though)

  2. the cheese sauce: heat flour and butter together in a saucepan, mix untill it expands, creamy.

  3. add 2 cups of milk to the flour/butter mixture. mix on low heat for about 15-20 minutes.

  4. add half the cheddar and half the mozarella to the mixture, continue mixing

  5. add garlic and onion to the sauce mixture. mix well for a few more minutes, and add spices. mix on low heat for several more minutes. taste, if its good then the sauce is done!

  6. Mix the 4 eggs and remaining 2 cups of milk in a bowl and pour half over an oven dish (whatever you will be baking in mac in)

  7. Mix layers of macaroni, cheese sauce, the remaining egg/milk mixture, and the remaining cheddar and mozarella cheese on the dish.

  8. sprinkle the parmesan cheese on top, spreading all over evenly

  9. bake for about half an hour at 175 C (350 F)

serves 10-15 (depending on how much people eat I guess)

and uhm...if the amount of saturated fat worries you, then use less cheese (it isnt actually all that necessary to use that much. my guests just really like their cheese)
