Take a chicken breast, or leg whichever you prefer...and shake in a bag that you've crushed 1/4 cup of Special K cereal. then bake in 350 F oven. HUmmmm good! And Low Cal.

It's a great. I've made it using Rice Krispies and have dipped the chicken in skim milk first to allow the Rice Krispies to stick.

There was a recipe on Hungry Girl for crusted chicken or fish using pulverized Fiber One cereal. It turned out great - very crunchy and tasty. When I did salmon, I dipped it in buttermilk first, then in the crumbs, then baked it. It came out with a crunchy crust and moist and juicy inside.

Weight watchers had a similar recipe in one of their cookbooks, instead of milk, it used buttermilk which adds a tangy taste and they sprayed it with a bit of PAM.
I have grape nuts at home, do you think this would work or do you think it would be too coarse?
dcgirl, hungry-girl.com is always and forever coating things in fiber one cereal, so I would think it would work. If you put it in a food processor and grind it up really well, that should help.
I could grind it up more for sure. how would this be different than using just whole wheat bread crumbs? more nutrients maybe?
