Yucky Soup

So I've been eating alot of soup, homeade soup. Using cabbage,celery,carrots,onions. Seasons,pepper,and chicken soup base(no MSG). But it still has a ronchy taste. Is there anything I can add besides meat to make it taste better. Because as you may see in my profile I've been tying to lose this extra 15lbs FOREVER. But it seems like I lose then gain it again.

Have you tried using a real chicken and making chicken stock?  It can make all the difference in the taste of your soup.

Of course, I agree with using the real chicken to make stocks - even leftover bones from a rotisserie chicken.

If you are looking for an all-veggie alternative, however, roasting your veggies in the oven can do wonders to make a tasty vegetable stock that has "depth of flavor" and doesn't require animal protein. 

Toss tomatoes, red & green bell peppers, onions, mushrooms, zucchini, carrots, sweet potato/pumpkin/squash, fennel and even cabbage in a big bowl with a little bit of olive oil and some dried herbs (thyme, rosemary, oregano), S&P if you like it.  Then place in a roasting pan, into a 450 degree oven until the veggies are nicely caramelized (about 20 minutes?)  Once that is done, place the veggies into a soup pot, cover with water (or veggie broth), put a bay leaf into it, and let it simmer for maybe 30 minutes.  You can make the soup chunky, or puree it, and vary the veggies to include your favorites.  It always turns out delicious for me when cooked this way! 

Try seasoning it with goya adobo.  Taste supper.  You can add potatoe or pumking (fresh) to thicken it a bit.  The pumpkin adds a sweet taste.  Add bay leaf to it too for a different but very tasty flavour.  My mom makes an awesome spanish homeade soup, it's with chicken, a bit of olive oil, carrots, brocolli, bay leaves, oregano, pumkin or potatoe, the adobo that I mentioned, garlic powder, angel hair pasta, green peppers and onions, tomato paste, olives. 

Also if you're trying to lose weight, make sure your eating enough calories.  If your eating soup all the time, you may not be getting the right amount of calories.  And if your not eating enough, you won't lose.

I also love pollo fricase.  You should google it and try it.

 I would recommend you try this recipe for Tomato, Bacon & Red Lentil Soup.  Random vegetables can turn out a little bland and boring whereas the combination of tomato and smoky bacon is much tastier.

 

Why don't you follow a soup recipe instead of just throwing in random vegetables?

Pumpkin soup, red lentil and bacon soup, leek and potato soup, mushroom soup, roast tomato and basil soup, pea and ham soup - these are all classic soups and there are 1000s of recipes out there waiting for you on Google. Smile

The soup I make is similar to yours, but with a tomato base using V8 and a bit of marinara sauce.   I love it, but to each his own.  PS - maybe you aren't stewing long enough.   I leave it in the slow cooker all day.

I agree - use a recipe until you find out what works for you.  I make many of my soups with water, no stock needed. If you like tomatoes, they make a soup flavorful and interesting.  Here are a few of my favorites
