YUCKY veggies!
Does anyone have any advice for those of us who can't stand greens? The only veggies I can tolerate are baby carrots, and cooked broccoli. I've just never had the taste for them. I know it seems childish being a grown woman turning her nose to vegetables, but I want to know if you guys know of a way to over come it, or know of any good substitutes. Thanks in advance!

How long has it been since you tried anything new? Perhaps even if you don't like salads, you might like some cooked veggies.
Do you like potatoes? That is a vegetable you know. You can do all sorts of things with potatoes besides loading them down with butter and cheese.
How about vegetable soup? It is pretty good with beef broth. I also really like v8 juice for a serving of vegetables.
Here is a trick people use to get their kids to eat more veggies, it might work for you too. Put your cooked veggie in the blender and puree it. Then add it to a meat loaf or spaghetti sauce or Mix it in with mashed potatoes.
Do you eat corn? It is good too. Just leave off all that butter. I am using the I can't believe its not butter spray. It's not as good, but it gives the flavor of butter with 0 calories.
Bread is made from vegetables, just watch your portion size and calories.
Everything that is not meat or fat is vegetable. How about avocados? Walnuts? peanut butter? Just watch your portions and explore.
And remember the less processed the better.
Wow, Texmom, you have no idea how helpful you are! I could definitely try some of those ideas. I am a huge potato lover, and will have to deal with the lack of butter. (Butter lover as well) I love peanut butter, and soups with carrots, and celery in it. ![]()
Texmom... your ideas are really good... I'm not that into V8 juice, but if its in spaghetti sauce loaded with mushrooms like my moms homemade, then i can stand it... avocados are really good... especially on a sandwidch1

I'm not into the whole veggie thing either. I never cared for the V8 juice either, but one day I broke down and tried that V8 Vfusion. It was my life saver. The flavors are more like fruit juices. I've compared the taste to things like Tropicana Twister. It's nothing like regular veggie juice and it doesn't taste like veggie juice either. A few glasses a day and you'll have what you need. My veggie list isn't that much longer than yours... And I'm SUPPER picky about everything! I hate the taste of romaine lettuce... I can only eat iceberg. All the fancy lettuce taste like tree leaves to me!
Carrots, iceberg, cucumbers, corn(some times), green beans... cooked cauliflower and broccoli.... I'm almost sure that's it for me :( celery but only if it's got PB on it!... and I don't like any veggies 'plain'... I have to dip them all in something or I just don't like the taste.
I need to go out and get some of that V8 fusion stuff too!

Look into Walden Farms zero calorie dips and salad dressings. They aren't as good as the fattening kind, but are good for zero calories.
I LOVE Granny Smith apples dipped in the Walden Farms zero calorie caramel dip!!!
My mother makes the most delicious low-cal mashed cauliflower! I have to get her recipe!!
Other then that, I am using low-fat ranch dressing with green and red pepper slices and baby carrots.
I love my veggies, but I'm picky about how I eat them. Can't eat tomatoes on a sandwich or cooked, but can eat them raw like an apple with a bit of black pepper on it..
Sometimes, you just have to choke them down though..that's how I am with spinach..it's so good for me, yet I cannot manage to sit and enjoy it.
Also, sometimes instead of shredded iceberg lettuce on a sandwich..I perfer to go meatless with shredded cabbage..gives it a different taste that's actually really good..and I hate cabbage..
I surprised myself recently by eating grilled summer squash. it was good. I also ate raw summer squash with some low cal honey dijon salad dressing.
I have hated squash since I was little (unless it was sliced thin, dredged with cornmeal and fried crispy)because it has seeds in it and the center is a little gooky, icky, gooey. But when they are young and the center is firm, I find I do like it.
