yummalicious low cal fries!!!
First let me say french fries are my biggest weakness. Those salty crispy devils are the be all end all of my eating world add cheese and I'm in heaven.
Second I'd like to say anyone who has not checked out hungry-girl.com--do it.
I found this DELICIOUS french fry recipe from her cookbook (but it's on the website too)
I was totally skeptical about it as it uses butternut squash instead of potatoes but holy cow. YUM. All you do it cut up some butternut squash, spray it with cooking spray, cover it in salt, and bake at 475 for 40 minutes (or shorter if you make small fries) Mine didn't take nearly that long, but you need to flip them half way though. I had a giant plate of them for only 60 calories!!!(I used a scale to weigh my yummy fries and used calorie count's numbers for butternut squash) So low cal I got to add a little cheese and dip them in ketchup. I never thought it would be comparable, but they are the perfect substitute! I'm in total shock at their deliciousness.
Warning--they are a little difficult to cut up--I sliced open my finger, but for such a low cal yummy treat...it's totally worth it!!
I still can't believe they're so good!!!!

That is where I found the recipe for chili cheese fries, and they were that same kind-- butternut squash. Unfortunately, I had to substitute veggie stick type things because butternut squash are out of season. I went to 3 grocery stores and a vegetable stand.
That sucks! I just bought mine from Target, but they had them at Publix too. Look again--they're starting to come in season! Oh, and you can use frozen butternut squash too apparently. I wonder if that tastes just as good, because it sure would be a lot easier!

Definitely that Hungry Girl book is the best thing ever! All the recipes are just too good, and you get satisfied very easily with this delicious food so low in calories, I just love the book and the website, it's what I was looking for! It's perfect! Everyone who hasn't looked at it should visit it! I've never tried this one but now you said is such as good as real french fries, and going to make it soon!!
I found butternut squash, at Publix, like you said! I had looked at Publix before, but I guess I just needed to give it a couple of weeks for them to come into season. I got a small pumpkin too. I hear that it is a great substitute for sweet potatoes but with very low calories.
I tried this, but I screwed it up! LOL Yes, I screwed up a recipe whose ONLY ingredients are squash, salt, and cooking spray! I left off the cooking spray, so they didn't get crispy and I burned up most of them. HOWEVER, the few that weren't burned up were not bad, and they definitely SMELLED like fries. The recipe has great potential, I just have to get it right next time! I have some sliced up uncooked "fries" in a baggie in the fridge so that I can try again tomorrow. I am going to toss them in a bowl with a little bit of olive oil this time before I put them in the oven.
Oh no! They really are good though. My super picky boyfriend smelled them and said he'd eat them, because they really do smell like fries. He actually said you could smell them out in the hall of my condo! hehe. Amazing how much they smelled like fries though... Well, I hope you get them to work next time, because they're soooo good! Watch out if you add olive oil though--it will add some calories.
