yummy low cal desserts!
Okay, well the whole point that I choose to eat low cal rather than go on a fad diet is because I can't lose weight for very long on a diet that forces me to exclude some of my favorite foods. Most of the time I crave salty, but when I crave sweet I have a few yummy go-tos that won't bust the calorie budget. I thought I'd share them with you guys, and if you have any more to add that would be awesome, obviously.
Pumpkin Pudding:
It's super simple. I got the idea from hungry girl (love her!). She does a single serving (you can go to hungry-girl.com for that recipe) but I didn't have any single pudding cups so I used sugar free cheesecake pudding and a can of pure pumpkin. I added splenda, vanilla, and some pumpkin spice seasoning to taste! Oh my gosh. So yummy. A 1/2 cup is only about 60 calories too. Not bad. It tastes very decadent. Almost like pumpkin pie filling! I'm thinking about adding some graham crackers sometime too...then it would really be pie like.
Strawberries and Angel food cake
I never realized how low calorie angel food cake is until recently. An 1/8 (53g) of a cake is only 120 calories. (I store bought one--it had no bad for you stuff aka trans fats, partially hydrodgenated ya da--and weighed it out into single servings then put them in baggies in the fridge so I can get at them fast!) All I do is add some sliced strawberries. Oh my gosh. So good. Seriously. And you get a huge slice of cake too. If you have enough calories it would be great to add a little sugar free ice cream!

Okay this isn't really a recipe, but this chocolate is so good! I keep it in the freezer. One whole bar is 100 calories, but I only ever eat half of one. It's a great chocolate fix, and it's good for your heart! The chocolate is rich and it totally satisfies a sweet craving with only 50 calories (for me, but 100 wouldn't be bad either!)
cookies
I have a problem that when I make cookies. I eat probably 20 cookies just in dough and then too many cookies when they're made. AAAH! So I bought so those cookies that are already divided out (I found an organic chocolate chip one...two cookies for 140 calories--but they're small) Then not only do you not have the temptation of licking the bowl, or fresh cookies sitting around, but you always get a cookie hot out of the oven! YUM!
no pudge brownie mix
This is a package mix. It's called no pudge brownie mix, but the great thing about it is on the side it gives directions for a one serving microwave brownie! All you do is add fat free vanilla yogurt. I always have some of that anyway--but the brownie is so good! And super easy. This is good for those who either can't eat a whole recipe of brownies by themselves...or those who can't stop themselves from eating the whole thing! If you've ever tried betty crocker mini delights it's pretty similar, except mini delights have trans fats which can cause heart problems and other yucky stuff. My only suggestion is to not cook the brownie as long as the instructions say, but I like mine underdone a wee bit. I would say 30 or 45 seconds rather than a whole minute.
that's all I can think of right now, but these are my obsessions right now! I love all of them! I hope you guys like them as much as I do!
Great ideas! I'm going straight for the pumpkin pudding tonight. By the way - I bought "New Rules of Lifting for Women" by Lou Schuler. He advocates more calories and weight lifting to burn fat. I have been eating 1500-1800 calories for the past two weeks (1800 on lifting days - 1500 on nonweight lifting days). It feels so good to eat!!!! Check out the book. I recommend it.
