I just used a great recipe from vegweb.com for a vegan thanksgiving meatloaf, and I want to share it's deliciousness with the world!

I took the original recipe right here and did a few things.

Firstly, I cut it in half because I'm a single college student living alone and don't need that much meatloaf-plus this was a sample baking to see if it would be worth doing on Thanksgiving.
Secondly, I slimmed down on the walnuts by quite a bit for calorie reasons.. though they are a healthy fat and most vegetarians could easily get away with using the normal recipe and having it fit into their dietary regimine.
Thirdly, instead of baking it as a loaf I put it into individual muffin pans so that I could have individual servings that still have a crispy top, and also for the sake of doling out single servings before hand so I knew how much I was eating(for the recipe analyzer).

The result: delish. I had mine crumbled over spinach salad but there are a million ways you could eat it.

I made this same recipe for Thanksgiving last year...with very good results! It's wonderfully flavorful and hearty.

wow! That sounds great/super low cal! Do you think I could cut out the walnuts though? I hate walnuts plus I realized recently that my stomach can NOT handle nuts :(.

I suppose that you could cut out the walnuts, but they are barely noticeable as walnuts anyway since they go through the food processor. I think they add a bit of needed flavor.. the recipe I posted had drastic reduction in walnuts already, but I think they might just need that little bit for flavor. Perhaps you could replace them with pecans, or maybe even smoked hazelnuts or smoked almonds. If you can't handle nuts at all.. maybe add some rolled oats, but I can't imagine it making up for the flavor the nuts add. Can you handle seeds? Maybe roasted sunflower seeds.

 

haha; I can't have oats either! (gluten intolerance) maybe if I tossed some millet in there? hm.
