Zucchini Bread with Splenda

Quote  |  Reply

When I enter my recipe on CC with Splenda rather than sugar the calorie count goes up instead of down so I looked at the sugar vs. Splenda. 1 1/3 cup sugar had 1032 calories and 1 1/3 cup Splenda has 1280. How can that be right? I thought Splenda had little or no calories?

If anyone can explain this to me, I would be most grateful as I just spent quite a bit of money on a huge bag of Splenda (darn it!)

Thanks for the help!

The Splenda that is used for baking is actually a mix of Splenda and regular sugar. So the "Baking Splenda" DOES have calories, and that is what the recipe analyzer is counting (it says "Splenda Sugar Blend for Baking). The packets for coffee have no calories (actually they have 4 calories to be accurate).

I have no idea how a sugar/splenda mix could have MORE calories than sugar alone though. I don't know the answer to that one. Perhaps because Splenda is sweeter you only need a small fraction of the amount of sugar so instead of 1.33 cups you are supposed to use like half a cup? Maybe?

I found the problem, I bought the Splenda No Calorie Sweetener rather than the baking blend. There are no calories in this one. I'm going to try a couple of loaves and see what happens with it.

I'm still a little confused about the Splenda Blend though too. Hmm, weird. Thank goodness I didn't buy that one, I'd be trying to figure it out all night and never get anything baked! Yell

Thanks for the help!

Good luck!

I believe you're only supposed to use half the amount of splenda that the recipe calls for in sugar.  Baking splenda is extra sweet, so you don't need as much, or something like that.  I think it says that on the front of the package.
