What are some yummy recipes that will use up a lot of squash? I literally have 14 assorted squash and zucchini that I need to get rid of! I am looking for a few creative dishes to use them in. I have zucchini, summer squash, and acorn squash. Thanks!!
One of my favorite things to do with zucchini is sautee it in a little olive oil with some onion, garlic, salt and pepper, then stir in some thick tomato sauce, like spaghetti sauce. It's really good served on a sandwich or wrap with some cheese on top, or it's also delicious served on top of brown rice. That's not all that "creative" but it's what came off the top of my head.
this is great! Tried and tested. Also, this would be good with egg plant.
- 2 medium zucchini/squash, cut into 1/4-inch slices
- 1/2 cup seasoned dry bread crumbs
- 1/8 teaspoon ground black pepper
- 2 tablespoons grated Parmesan cheese
- 2 egg whites
- pinch of garlic powder or seasonings of your choice
Makes 4 servings:
per serving: 89 calories / 1.5 grams fat
Preheat the oven to 475 degrees F (245 degrees C).
- In one small bowl, stir together the bread crumbs, pepper and Parmesan cheese. Place the egg whites in a separate bowl. Dip zucchini slices into the egg whites, then coat the breadcrumb mixture. Place on a greased baking sheet.
- Bake for 5 minutes in the preheated oven, then turn over and bake for another 5 to 10 minutes, until browned and crispy.
One of my favorite way to cook zucchini is with a can of stewed tomatoes. Cut the zucchini in generous chunks and dump it in a pot with the tomatoes. Simmer until the zucchini is as tender as you like it. Add fresh basil or parsley if you like, right at the end.

its basically tons of cheese, onions and yellow squash...not low cal or anything BUT IT IS GOOD
Ingredients4 pounds yellow squash, cut into 1/4-inch slices
2 tablespoons butter or margarine
1 large onion, finely chopped
2 garlic cloves, pressed
1 (10 3/4-ounce) can cream of mushroom soup, undiluted
1 cup (4 ounces) shredded sharp Cheddar cheese
2 large eggs
1 teaspoon salt
1/2 teaspoon pepper
Melt butter in a large skillet; add chopped onion and garlic, and saute until tender.
Combine onion mixture, squash, soup, and remaining ingredients; spoon into a lightly greased 11- x 7-inch baking dish.
Bake at 350° for 30 minutes or until bubbly.
Yield8 to 10 servings
stir fry is another healthy option - oil, ginger, garlic, soy sauce.
Squash soup is delicious - use spices and add lentils!
They also both go really well in a coconut curry sauce, with chickpeas or lentils. Zucchini, bell pepper and mushroom do well together in a tomato based curry suace too.
Or you could roast them and serve lukewarm/cold with feta cheese or grilled halomi and pine nuts to make a delicious salad.

Zucchini and summer squash can both be cut into chunks and just sauted with a little oil (1- 1.5 tbsp should do it, depending on how much you're making) and some garlic salt. Makes a very yummy side veggie for dinner.

They're also very good to throw into lasgana, expecially when you use eggplant as the "noodle" instead of pasta.

I signed up for a local organic food delivery service that collects locally grown produce from area farms and delivers it to people in the city once per week. Apparently squash is in season here as I have loads of it!!
Go to Cooks.com and type in MOCK APPLE Pie. It uses zuchinni, all you need to do to make it calorie smart is substitute the sugar with SPLENDA.
Another favorite of mine is just
Plain dicing it up or slicing it and putting it in the microwave with Parkway squeeze butter. I use this because it is chlosterol free. The seasoning I use on it is Canadian Steak seasoning which is simply: Garlic, Onion, Salt, Ground Pepper, Paparika in one container.

Cut it in half (or thick strips) and throw it on the grill! A sprinkle of salt and it's ready to eat.
Grate it, and freeze the grated squash in 2-cup portions. Then you can make zucchini bread any time of the year! Not the healthiest, but makes a heck of a treat.

Zucchini is green - kinda looks like a cucumber - and squash is usually yellow, although there are also other varieties of summer squash.

We make a yummy dish of saute'd zucchini and onions with garlic, salt and pepper, with a little reduced fat pork sausage and your favorite pasta mixed in....yummmmm :)

Zucchini is one type of summer squash. Others include yellow crookneck, cucuzzi, patty pan... they all taste similar, have soft skin and soft flesh, and usually have skin colors in the yellow/green spectrum with pale colored flesh.
Winter squashes have thicker skin and often orange flesh. Examples: pumpkin, acorn, butternut.
