| 1 | small tomato |
| 2 | medium zucchini |
| 3 | tablespoon chopped onion |
| 1 | tbsp vinegar |
| 2/3 | tsp olive oil |
| 1/2 | tsp pepper |
| 1 | tsp basil |
| 1 | dash salt |
- mix vinegar, olive oil, and seasonings
- chop tomato, zucchini, tomato and add to mixture
- allow to marinate for an hr
- then serve with or without pasta
- OR spread on pan and roast in oven at 450 for 20 min. stirring every now and then
